Masterminded by Corrochio’s co-founders and couple, Daniel Corrochio and Amy McQuarrie, CINCO will shine a spotlight on Agave and Mexican spirits, delivering an approachable drinking experience and exploration of Mexican culture through an elevated cocktail programme. Set to quickly become London’s leading authority on Agave spirits, CINCO will present a curated selection of the finest Mexican spirits and tasting flights and will feature a range of spirits handpicked by the couple during their extensive travels across Daniel’s native homeland of Mexico. Some of these rare tipples were bottled right at the still, and personally transported back to the UK, ensuring that CINCO’s collection of exclusive rare finds, is ever-evolving.
Representing different regions throughout Mexico, CINCO is a true labour of love for Daniel and Amy and the bar pays homage to the former’s upbringing in the state of Jalisco, the birthplace of tequila and mariachi music and Daniel’s first foray into the drinks industry. His love for agave stems from his father who, now aged 102, credits his longevity to the tradition of drinking one or two tequilas a day before lunch, a custom that Daniel, the youngest of 15 siblings is happy to continue.
Daniel has incorporated significant influence from his family into many of Corrochio’s dishes and CINCO’s cocktail menu. CINCO’s drinks list, presented in a hand-made menu in collaboration with Mexican artist Cactus Studio, comprises 5 agave, 5 Mexican spirit and 5 considered non-alcoholic cocktails made from zero proof distillates and Mexican ingredients. Agave | El Guapo | blending espadin mezcal, vermouth, Alma Finca Mexican orange liqueur, achiote, and mango with chilli, oregano, bay leaf and citrus shrub
Agave | El Pichón | a mix of blanco tequila, melon liqueur, grapefruit soda and house citrus solution, finished with verbena and saline air
Mexican | El Tejate | blending corn and butter fat washed Abasolo Whisky with a bitter aperitif, Nixta corn liqueur and creme de cacao
Mexican | El Chato | a mix of Charanda rum with Rhum Agricole, Shochu, triple filtered cinnamon and vanilla infused rice milk with banana liqueur and citrus
Non-alc | La Netita (Non-alc), a blend of Almave, homemade chilli syrup, coriander, mint and pineapple
Non-alc | El Pichon (Non-alc), a mix of Three Spirits livener, grapefruit soda and house citrus solution, finished with verbena, grapefruit and saline air
CINCO will also proudly be launching its in-house, limited edition Mezcal, ‘Pechuga de Piña’, a pechuga-style mezcal from a small producer in the Ejutla region of Oaxaca, distilled with fresh local pineapples and which will be available to sample in the bar and to purchase. In collaboration with the London based project Sin Gusano, Amy and Daniel selected a ‘pechuga’ style mezcal due to its tradition of being enjoyed with friends and family, highlighting the importance of sharing and community to both CINCO, and Mexican culture.
The cocktail menu will be accompanied by a selection of five small plates, featuring Corrochio’s famed dishes reimagined into bite-sized portions, highlights of which will be seen in the likes of ‘Flauta de Pulpo’, a blue corn tortilla deep fried with an octopus tentacle, on a bed of jalapeno mash, the signature ‘XO Taco’ with pork belly on a bed of XO sauce, deep fried with panko and topped with salsa borracha and pink pickled radish, and a ‘Scallop ceviche mini tostada’ with scallops, samphire, guacamole, shaved carrots, onions, chiltepin and black salsa.
Tucked away below street level underneath Corrochio’s, with a secret adjoining staircase and just 30 covers, the intimate drinking den has been sympathetically styled, rather than designed. The bare brickwork left untouched, is simply adorned with quirky Mexican artwork, collected during the couple’s travels across Mexico, complemented by dim lighting and a cosy fireplace.
