After grinding, you\u2019re looking for a powdery consistency with a few small chunks.<\/li>\n<li><b>Cake Flour:<\/b> Cake flour helps promise an extra soft and cake-like crumb. I use it in a lot of <a href=\"https:\/\/sallysbakingaddiction.com\/category\/desserts\/cakes\/\">cake recipes<\/a> because it keeps everything light and airy. If you can\u2019t find it, use this easy <a href=\"https:\/\/sallysbakingaddiction.com\/cake-flour-substitute\/\">cake flour substitute<\/a>.\u00a0<\/li>\n<li><b>Egg Whites + Sour Cream<\/b><strong>:<\/strong> These two power ingredients, along with cake flour, attribute to the cupcake\u2019s light and fluffy texture. Egg yolks weigh the crumb down, so you\u2019ll use only the egg whites. And sour cream adds pure moisture, which is key in a batter with lots of powdery nuts. I promise you\u2019ve never tasted a cupcake like this.<\/li>\n<\/ul>\n<p><strong>Can I Use Salted Pistachios? <\/strong>Yes, salted pistachios are perfectly fine and will add a lovely sweet\/salty flavor. The pictured cupcake batter did not include green food coloring, which is why it\u2019s a bit yellow. It\u2019s incredible!<\/p>\n<\/div>\n<p>I knew this strawberry frosting would be perfect for these pistachio cupcakes because you need a food processor for the nuts anyway. The reason we\u2019ll use freeze-dried strawberries in this strawberry frosting is because they deliver the most intense (and natural) strawberry flavor while, at the same time,\u00a0do\u00a0not alter the texture of the actual frosting.
