They have similar health benefits, like extra fiber and micronutrients, but because of its color and composition, white whole wheat flour has a lighter taste and texture, closer to that of all-purpose flour.<\/p>\n<p><span style=\"color: #36a6bf;\">Hint:<\/span> It\u2019s like the difference between red and green grapes. Noticeably different appearance, slightly different flavor, but similar health benefits!<\/p>\n<p>Both regular whole wheat flour and white whole wheat flour yielded beautifully moist and tender loaves, but I noticed the spices really sang in the gingerbread made with white whole wheat flour. The slightly nutty undertones from regular whole wheat flour muted the spices\u2019 flavor a bit. This foil tent prevents the loaf from browning too quickly on top. It also yields a rounded dome, rather than a jagged or uneven one, by ensuring that steam escapes more evenly.<\/p>\n<p>Partway through, you\u2019ll remove the foil. Be careful and work quickly! If you leave the pan out of the oven for too long, the loaf will begin to sink, and it won\u2019t recover. Do you know why?<\/strong><\/span><br \/>There are a few common culprits. The first is too much flour or too many oats. That throws off the ratio of dry and wet ingredients, which yields both a dry and bland loaf. The second is not enough molasses or milk, which creates the same result. Make sure you\u2019re measuring each of these properly! (See the \u201cMeasure correctly\u201d header in the \u201cHow to Make a Healthy Oatmeal Gingerbread Loaf\u201d section above for more info.)<\/p>\n<p>Third, don\u2019t skip the foil on top. That helps the loaf rise and bake more evenly, and it also prevents the top from drying out and burning.<\/p>\n<p>Finally, don\u2019t overbake your gingerbread! That also results in a dry loaf. Try pulling it out of the oven a bit sooner. It\u2019s done baking when the top feels firm to the touch and a toothpick inserted into the center comes out clean or with a few crumbs attached.<\/p>\n<p><span style=\"color: #000000;\"><strong>Mine collapsed while cooling. Why is that?<\/strong><\/span><br \/>There are a couple of typical suspects here as well. First, removing your loaf from the oven before it\u2019s fully baked will make that happen. If it looks underdone on the inside \u2014 or there\u2019s a gooey strip sitting just above the bottom crust when you cut into it \u2014 try baking your loaf longer next time. That should help!<\/p>\n<p>Next, too much liquid in the batter will also make the loaf collapse while cooling. Make sure you\u2019re measuring the molasses and milk properly! (See the \u201cMeasure correctly\u201d header in the \u201cHow to Make a Healthy Oatmeal Gingerbread Loaf\u201d section above for more info.)<\/p>\n<p>Finally, don\u2019t substitute 1 large egg for both egg whites! This loaf requires both egg whites. Immediately put the pan back in the oven, and continue baking the gingerbread for an additional 30-35 minutes (for a total of 75-80 minutes) or until a toothpick inserted into the center comes out clean or with a few crumbs attached. Cool in the pan for 10 minutes before carefully transferring to a wire rack to cool completely.<\/span><\/p>\n<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div id=\"recipe-47888-notes\" class=\"wprm-recipe-notes-container wprm-block-text-normal\">\n<h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-uppercase wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3>\n<div class=\"wprm-recipe-notes\"><span style=\"display: block;\"><strong><span style=\"text-decoration: underline;\">IMPORTANT MEASURING NOTE \u2013 READ BEFORE BEGINNING<\/span>:<\/strong> It&#8217;s <span style=\"text-decoration: underline;\"><strong>extremely<\/strong><\/span> important to measure the oats and flour correctly, using <a href=\"https:\/\/amyshealthybaking.com\/blog\/2013\/09\/17\/baking-basics-101\/\">this method<\/a> or a <a href=\"https:\/\/www.amazon.com\/gp\/product\/B001N07KUE\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B001N07KUE&amp;linkCode=as2&amp;tag=amysheabak-20&amp;linkId=BLFGPBPKVHU6GFYR\" target=\"_blank\" rel=\"nofollow noopener\">kitchen scale<\/a>. (\u2190 That\u2019s the one I own!) Too much of either will dry out the gingerbread. This is especially true of the oats; they act like little sponges and soak up lots of moisture.<\/span><br \/>\n<span style=\"display: block;\">\u00a0<\/span><br \/>\n<span style=\"display: block;\"><strong><span style=\"text-decoration: underline;\">IMPORTANT MIXING NOTE \u2013 READ BEFORE BEGINNING<\/span>:<\/strong> Do <span style=\"text-decoration: underline;\"><strong>not<\/strong><\/span> use a stand mixer or hand-held mixer to make the batter. This will result in rubbery, gummy, dense, or tough gingerbread. Use a whisk where instructed, and use a fork for everything else.<\/span><br \/>\n<span style=\"display: block;\">\u00a0<\/span><br \/>\n<span style=\"display: block;\"><strong><u>IMPORTANT FLAVOR NOTES \u2013 READ BEFORE BEGINNING<\/u><\/strong><strong>:<\/strong> I think this gingerbread tastes even better a day after it was baked! That gives the spices a chance to meld and marry, so they taste a bit stronger, richer, and fuller the next day.<\/span><br \/>\n<span style=\"display: block;\">\u00a0<\/span><br \/>\n<span style=\"display: block;\">For a stronger spice flavor, increase the ginger by anywhere from an additional \u00bc to 1 \u00bd teaspoons. I generally use a total of 4 to 4 \u00bd teaspoons because I love my gingerbread on the spicy side. (See the \u201cSpices\u201d header in the \u201cKey Ingredients to Make a Healthy Oatmeal Gingerbread Loaf\u201d section in my blog post above the recipe for more details!)<\/span><br \/>\n<span style=\"display: block;\">\u00a0<\/span><br \/>\n<span style=\"display: block;\">For sweeter gingerbread, increase the liquid stevia by an additional \u00bc to \u00bd teaspoon.<\/span><br \/>\n<span style=\"display: block;\">\u00a0<\/span><br \/>\n<span style=\"display: block;\"><span style=\"text-decoration: underline;\">OATS NOTE + ALTERNATIVE<\/span>: Instant oats are also called \u201cquick cooking\u201d or \u201cone-minute\u201d oats. They\u2019re smaller and thinner than traditional old-fashioned rolled oats, so they soften faster (which gives this gingerbread its supremely moist texture!). They only include one ingredient \u2014 oats! \u2014 just like old-fashioned rolled oats. You can find instant oats right next to the traditional old-fashioned rolled oats at the grocery store. (They are <strong>not<\/strong> the ones in the small flavored packets of oatmeal!)<\/span><br \/>\n<span style=\"display: block;\">\u00a0<\/span><br \/>\n<span style=\"display: block;\">In a pinch, to make your own, add \u00be cup (75g) of old-fashioned rolled oats to a <a href=\"https:\/\/www.amazon.com\/Ninja-Kitchen-BL770-Processor-Smoothies\/dp\/B00939I7EK?&amp;linkCode=ll1&amp;tag=amysheabak-20&amp;linkId=e5b5c055e73e85da277b51c30d4a61ab&amp;language=en_US&amp;ref_=as_li_ss_tl\" target=\"_blank\" rel=\"nofollow noopener\">blender<\/a> or <a href=\"https:\/\/www.amazon.com\/Ninja-Kitchen-BL770-Processor-Smoothies\/dp\/B00939I7EK?&amp;linkCode=ll1&amp;tag=amysheabak-20&amp;linkId=e5b5c055e73e85da277b51c30d4a61ab&amp;language=en_US&amp;ref_=as_li_ss_tl\" target=\"_blank\" rel=\"nofollow noopener\">food processor<\/a>, and pulse until they\u2019re \u215b to \u00bc of their original size.<\/span><br \/>\n<span style=\"display: block;\">\u00a0<\/span><br \/>\n<span style=\"display: block;\"><u>MOLASSES NOTES + ALTERNATIVES<\/u>: I don\u2019t recommend substituting anything for the molasses, if at all possible. It\u2019s required to produce the iconic gingerbread flavor. <a href=\"https:\/\/www.amazon.com\/dp\/B002QGXK80?&amp;linkCode=ll1&amp;tag=amysheabak-20&amp;linkId=d5cb35cd2c7a79c3820ecaf71cdad442&amp;language=en_US&amp;ref_=as_li_ss_tl\" target=\"_blank\" rel=\"nofollow noopener\">Regular unsulphured molasses<\/a> is best. If you\u2019re overseas and can find black treacle, that would be an even better substitute!<\/span><br \/>\n<span style=\"display: block;\">\u00a0<\/span><br \/>\n<span style=\"display: block;\"><span style=\"text-decoration: underline;\">FLOUR ALTERNATIVES<\/span>: Regular whole wheat flour, <a href=\"https:\/\/www.amazon.com\/Bobs-Red-Mill-Whole-Pastry\/dp\/B004VLVI0A?&amp;linkCode=ll1&amp;tag=amysheabak-20&amp;linkId=e1f592c82cc1217afd02d02bf9dc585d&amp;language=en_US&amp;ref_=as_li_ss_tl\" target=\"_blank\" rel=\"nofollow noopener\">whole wheat pastry flour<\/a>, or all-purpose flour may be substituted in place of the white whole wheat flour. The nutmeg and cloves add richness and a lovely background warmth. The whites contain the majority of the protein in eggs, and that protein is required to ensure the gingerbread maintains it shape and texture while cooling. Without both egg whites, the loaf will collapse while cooling and turn out much denser.<\/span><br \/>\n<span style=\"display: block;\">\u00a0<\/span><br \/>\n<span style=\"display: block;\">If you prefer to use whole eggs, then use 2 large eggs <strong>AND<\/strong> decrease the milk by 1 tablespoon (15mL) to compensate for the added volume from the yolks.<\/span><br \/>\n<span style=\"display: block;\">\u00a0<\/span><br \/>\n<span style=\"display: block;\"><span style=\"text-decoration: underline;\">STEVIA NOTES + ALTERNATIVES<\/span>:\u00a0Many stevia brands and products have different sweetness levels, so they\u2019re not necessarily 1-for-1 substitutes for each other. For the best results, use the same liquid stevia that I do.
