

Hello Spring & Hello 10 Egg Free Spring Desserts to Bake now!! Also hello eggless baking. If you‘re wondering if you can bake cakes, cookies etc sans eggs, then yes, of course you can! While eggless baking is definitely different from baking with eggs as far as volume and the texture of cakes go, it’s very very doable. You can quickly rustle up the most delicious bakes and it’s very quick! Fewer dirty dishes too, so quicker clean up!

Picture the eggless cake above and the slice below of an Eggless Raspberry Chocolate Cream Cake I made in the beginning of March, the recipe I have yet to share. It was the best cake ever, we couldn’t get enough of it and it left us longing for more! The cake base was a simple, one bowl whisked together eggless sponge ready in under 30 minutes.

This eggless chocolate sponge, a recipe I use often in my layer cakes, moistened delicately by Cointreau {completely optional but so good}. A simple soft cheese filling set with agar agar, fresh best raspberries from Aldi UK, topped with a luscious dark chocolate ganache can only be good! This honestly tasted as good as it looks.

The eggless chocolate sponge recipe used above is one that a follower from the U.S. said on Instagram is one she uses all the time in her layer cakes even though she otherwise bakes with eggs!

Eggless baking goes beyond just baking eggless cakes. Think eggless desserts, think cookies, think galettes, think brownies, think pies. It is most definitely the best thing that ever happened to my desserts, and it was honestly the pandemic that gave me the final push. I’ve been blogging and baking for years, and going egg free with my cakes was something I never considered, even though I distinctly dislike the taste of eggs.

As I shared recipes on Instagram, there began a load of folk requesting for vegetarian desserts or eggless recipes, the most frequent comment ‘Could you please share an egg substitute’...

My son suggested I explore the option since it was a popular demand and I tried a couple of times, giving up pretty soon. He kept the pressure going, saying that he was sure I could nail eggless baking. The motivation was there, chia seeds were on my pantry shopping list constantly, and then COVID struck.

Forget eggs, even chia seeds were now something my readers found hard to come by. It was time to adapt even more and I’ve never looked back! It takes a getting used to since obviously a cake with eggs has quite a different mouthfeel, texture and taste somewhat, but if you are someone like me who doesn’t like even the slightest taste of eggs, you’ll be pleasantly surprised! Do give it a go…

Going egg free with my desserts is such a relief, so rewarding. Currently BBC and other news networks are running reports of the egg shortage in the United States because of bird flu etc.

I thought I’d share a little baking hope with bakers. Just want to reach out to folk who bake desserts, specifically cakes with eggs. Hey, until the situation eases, there are options to bake sans eggs. The desserts taste quite amazing!

It’s not that I’m vegetarian by diet. It’s just that I just don’t like the smell of eggs or a certain egginess that desserts with eggs have, and this is a choice I’m so glad I made! Take this Eggless Strawberry Charlotte Cake for example. With eggless savoiardi or lady fingers from scratch, this turned out beautifully. The vanilla bean flecked cream whipped in my SMEG, paired with fresh strawberries made it taste so good!

Also a tip which really works for me … Mix and match elements from different recipes to create your own recipes, or you can just use a basic recipe from here paired with your go-to filling, frosting etc! The possibilities are endless, and it’s somewhat easier than raising your own chickens or renting chickens for eggs while the crisis lasts!

An eggless chocolate sponge, deep delicious ganache, bright fresh raspberries topped with the smoothest and most luxurious mascarpone cream. The flavours do a magic dance on the palette, each spoonful delightful. The raspberries were quite special here though you can always use strawberries if you like. Makes 4 small cakes.

With semolina and coconut flavouring the cake, this eggless trifle is delicious and dreamy. It has beautiful tropical tones with mango adding the oomph and freshness a spring meets summer dessert calls for! A complete mango overload with all my favourite flavours in this very satisfying dessert bowl!

Raspberries and chocolate are just so good together, truly a match made in heaven! I love the idea of serving individual desserts in stem glasses, and this one was spoon licking good!

A quick, rustic and delicious eggless strawberry almond tart to celebrate the best strawberries. The pastry is buttery, crisp, very forgiving and behaves well, the filling sweet like candy, and the almond meal helps keeps the pastry from getting soggy.
