
Today I decided to cook corn for baby… on the cob! You can also use canned corn, don’t worry. Personally, though, I love cooking foods that have not been processed beforehand.
Babies love corn because it is very mild and slightly sweet. It is a vitamin-rich grain-vegetable that provides plenty of energy! It is very nourishing and also easy to digest, making it ideal for continuing baby’s food diversification.
We are going to prepare this corn as a purée: very easy to eat and lovely in the mouth. It will be served with minced chicken breast and a little melted cheddar, to keep introducing baby’s palate to the wide variety of cheeses around us!
Here is what you need to make this corn purée with chicken breast, melted cheddar and a whole-wheat toast finger for baby (from 8 months, for one serving of about 6.3 oz / 180 g):

Preparation

Start by bringing mineral water to a boil in a saucepan (I used a large enough saucepan to also hold a steamer basket… let’s make things efficient!). Do not fill the saucepan completely; add just enough water to fully cover the corn cob and the onion.
While the water heats, prepare the corn cob (skip this step if using canned corn, which is already prepared and cooked): husk it, remove all the leaves and silks, then rinse it under water.

Now prepare the onion. Peel it, then cut off 10 g. It will cook at the same time as the corn cob.


Cooking
Once the water is boiling, add the corn cob and onion and cook for 12 minutes. Let’s go!

Meanwhile, prepare the chicken breast fillet. Cut off 15 g and make sure there are no bits of bone, fat or sinew.

When the vegetables have 4 minutes of cooking time left, place the steamer basket with the chicken over the saucepan. (I use a very practical Lekue steamer basket!).



Once cooking is finished, place the corn cob in cold water so you can handle it without burning yourself. Prepare the chicken: check that it is cooked through, then place it in the blender and mince it at full power.

Cut the cheddar into small strips. I chose Wyke Farms cheddar, which is easy to find in supermarkets. Heat it for 1 to 2 minutes over low heat in a saucepan to melt it.

Once the corn cob is cool, scrape off all the corn kernels with a knife (always cutting downward so you do not hurt yourself).

Place the corn kernels in the blender with the onion and a small teaspoon of crème fraîche. Blend for a long time at full power until you get a very smooth purée.
Spoon the purée into a dish or small baby food jar, add the minced chicken, then top with the melted cheddar. You can serve this dish with a small whole-wheat toast finger for the starchy-food element (always serve under supervision). It’s ready!
