
Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!


This week’s meal plan includes: Thai coconut shrimp curry with Thai quinoa salad, grilled steak tacos with corn and avocado salad, Mediterranean chicken over rice or pasta, pressed Italian sandwiches with tortellini pasta salad, BLT salad with peaches, and breakfast egg muffins!
To simplify your grocery shopping list:
- Swap or add in your favorite veggies in the shrimp curry, Mediterranean chicken, and side salads.
- Look for fresh tortellini in your grocery store refrigerator section or frozen tortellini in the freezer section.
- You can swap the fresh corn for canned or frozen if needed for the corn salads.
- Buy the artichoke hearts that are packed in water, not oil.
- Flat iron is a very affordable cut and totally delicious, especially after a relaxing dip in an acidic marinade.
- You can mix and match the meats and cheeses in the sandwiches however you like, but variety is key.
- Mix up your greens with romaine, arugula, baby kale, little gem, and/or leaf lettuce.
- I love thick-cut applewood smoked bacon for the BLT salad.
- The egg muffin recipe calls for ham cheese, but use whatever you have leftover at the end of the week — bacon from the BLT salad, cheese from the sandwiches, and whatever veggies you have on hand.

Meal Prep & Leftover Tips


Thai Coconut Curry With Shrimp: Shrimp curry lasts up to 5 days in the fridge, and leftovers should be gently reheated over medium heat or in the microwave. Be very careful if microwaving, because shrimp tends to go dry and rubbery when microwaved.


Grilled Steak Tacos: Normally I marinate the meat overnight or at least all day for max flavor. But I’ve made these even with just 1 hour of marinade time and they turned out just as smoky and adobo flavored.


Mediterranean Chicken: You can serve the chicken breasts and their sauce over a bed of pasta, rice, or couscous.


Pressed Italian Sandwich: Wrap the sandwiches in plastic wrap before pressing. This contains all of the layers and makes for a cleaner bite.


BLT Salad with Peaches: For easy meal prep, make the dressing and croutons ahead of time (you can reheat the croutons gently in a skillet, just to warm them)


Egg Muffins: Egg muffins will keep stored in an airtight container in the fridge for about 4 or 5 days, and in the freezer for about 3 months.


Grilled Corn and Avocado Salad: Fresh summer corn is the cornerstone of this recipe, but you can use canned or frozen if needed.


Tortellini Pasta Salad: Choose spinach and cheese tortellini or a mix of your favorite multi-color tortellini. Use diced or cubed fresh mozzarella, tiny mozzarella pearls, or try a combination! Hothouse or English cucumbers work similarly well as Persian cucumbers.
