VISUAL ANALYSIS
Foam: white, abundant and long lasting. Good adhesion to the glass surface.
Appearance: reddish copper, slightly opalescent. Deep red/ light amber brown reflections.
Effervescence: mild
OLFACTORY ANALYSIS
Scent/ olfactory sensation: dark cherry, wood, fresh acidity, spicy (cinnamon), dried dark fruits. The Tonka beans carried hints of sweet cocoa and overripe plum, a touch of toast nuts (hazelnut), vanilla, toasted wood (obviously from the wood ageing),
Intensity of aroma: deep and fresh
Refinement of aroma: elegant and delightful.
GUSTATORY PERCEPTION
Tactile sensation: medium effervescence,
Intensity of aroma: deep and manifold character.
Taste: medium acidity (lactic and acetic), soft sweetness.
Olfacto- Gustatory sensation/ back aroma: mild sweet taste of the tonka beans and vanilla melted with woody and toasted notes. Dark cherries and soft blackberry jam, soft yogurt and vinegar to clean and refresh, maybe some ripe dark stone fruits and anise.
Persistence of aroma/ end: prolonged aftertaste of fresh dark berries (dark cherries) and dark fruits, wood. Good acidity.
OVERALL IMPRESSION: astonishing and incredibly complex Italian barrel aged beer, good drinking, memorable.
VEG FOOD PAIRING: dessert with jam or cooked fruits, cheesecake+berries, dark chocolate and berries dessert.
