
We’re not the biggest of Valentine’s Day people. But any excuse to eat cookies + eat our favorite dinner works for me! I wanted to give you gorgeous people a few quick ideas on some fast dinners + desserts that you can easily make either tomorrow night or prep a bit today and make tomorrow for you + your Valentine!! And if you don’t have a Valentine this year – do me a favor?! Still treat yourself to something yummy! Why?! Because you’re awesome and totally deserve something special and pretty on Valentine’s Day!
Also — maybe just make yourself some cookies tonight … like pre-gaming Valentine’s Day … with cookies. That’s a thing right? Can we make it thing if it isn’t? Okay, right we need to get back on track – you’ve got Valentine’s Day food to make, I’ve got cookies to bake + eat.
Dinners:
Valentine’s Day should have very delightful yet super easy dinners! Which is why my top four picks are all pretty, easy and quick to make!
1.) Ginger Chicken + Broccoli – It probably doesn’t surprise you but this year we’re having this for dinner! It’s a household favorite and super easy to make!
2.) Chicken, Pepper + Artichokes – This recipe is a bit more on the expensive side between the fresh peppers and artichokes, but if you’re looking for something really special to make that has a ton of flavor and minimal work this is the dish for you!
3.) Creamy Chicken + Broccoli – I LOVE this dish. I heart it in so many different ways! It’s fast, delightful, comforting and impressive to look at. If you want to really spice things up serve it over spaghetti squash like I did in the recipe post! Or you can make it easy and serve it over rice, salad, or vegetable noodles!
4.) Steak, Goat Cheese + Raspberry Salad – You can’t go wrong with raspberries on Valentine’s Day and you really can’t go wrong with steak and goat cheese either! Which makes this recipe the best of pretty much everything!
Dessert:
Dessert! Dessert is King + Queen on Valentine’s Day for most people! And here at the Paleo on a Budget household we agree with that philosophy … okay I agree with that … Mr. POAB is still firmly in the Ginger Chicken + Broccoli wins camp. But I digress — all of these dessert are easy, beautiful and oh so delightful to eat!
1.) Coconut Macaroons – These are tiny, delightful and elegant bites of awesomeness that look super complicated to make but in reality aren’t hard at all. And if you or your sweetheart doesn’t like chocolate just leave out the mini chocolate chips!
2.) Maple Vanilla Cookies – These are one of my favorite cookies of all time. Seriously, I cannot get enough of them. They’re gorgeous, easy and fast to make. These would pair really well with chocolate covered strawberries, fresh fruit, etc.!
3.) Ice Cream Cookie Sandwiches – The newest addition to the blog is sure a big hit in this house! It’s easy to make, combines two different recipes so it can play double duty {like make yourself a smoothie bowl, freeze the extra, make ice cream sandwiches} … which makes it not only pretty but epic as well!
4.) Mug Cake – Y’all knew this was making the list! The mug cake is a POAB staple recipe and seriously the easiest and I do mean easiest thing you could possibly make for Valentine’s Day! Did I mention it was a mini-cake in a mug?! So the clean up is literally just a mug? You’re welcome 😉
