I am all about easy and simple when it comes to cooking and entertaining in the summertime. I love quick and effortless pasta salads and dishes that work well not only as a light and healthy lunch idea, but also as a flavorful, make-ahead side dish for a backyard BBQ or a summer potluck. The Spicy Almond Cold Soba Noodle Salad recipe I am sharing with you all today easily meets the requirements for both.
Seriously, you all. This recipe comes together in just 15 minutes and can be easily doubled or quadrupled. And thanks to Roland® Organic Soba Noodles and RECIPE 33 Infused Almonds, this cold noodle salad recipe is packed with flavor and amazing textures.
Before I share the actual recipe with you all, let me tell you guys about a few of the products I am loving this summer for cooking and entertaining…
These Mess Free Flavored Almonds are made without any additives- just the real ingredients listed on each package that give each bag of these infused almonds tons of flavor without the mess. For example, the Garlic Dill almonds have garlic chips and dried dill tossed in with them. The Cinnamon Vanilla almonds are flavored with cinnamon stick and dried vanilla bean pods. And the Smoky Serrano that I used to top my cold soba noodle salad recipe with has real dried peppers added in for a little kick of heat.
These flavored almonds make the perfect addition to that summer charcuterie board or as a simple toss and go snack for road trips (store them in a Zip Top Reusable Container to keep them fresh even longer!).
I have to be honest- I had never really tried soba noodles until I had decided to create this cold noodle salad recipe that I am sharing with you all below. And now I am wondering why I had waited so long to try them!
Cooking them is super simple too. Just bring 6 cups of water to a boil and then stir in the soba noodles. Bring back to a boil and then lower the heat and simmer until tender, about 3 minutes. Simply drain and then rinse with cold water.
