Baked Eggs with Garlic & Cheese


Egg bakes are super easy and can be changed up with added ingredients for different flavor profiles each time you make it. I love to make these. They always taste so good! I wish I could get eggs more cheaply. They cost under $6.00 per dozen right now, which means the prices have come down slightly, thank goodness. The other ingredients were leftovers from other meal prep days, so they didn’t really up the cost on this dish any.

Baked Eggs with Garlic & Cheese

Makes: 2 servings

Ingredients:

4 eggs

water (could also use milk/milk alternative)

1/8 cup chopped mozzarella

1/8 cup chopped mild cheddar

seasonings of choice (I used salt & pepper, parsley, and oregano this time.)

1/2 to 1 tsp garlic in oil

  1. With the oven heated to 350*, melt the garlic in oil in an 8×8 baking dish.
  2. While the oil is heating, whisk up the eggs with a little water, until the yolks and whites are well combined. I think for 4 eggs I used between 1/16 cup and 1/4 cup of water. I use enough to get the color and consistency I want.
  3. Add the cheeses to the eggs and stir.
  4. Add the seasonings and stir again. Use the amount you like. If you don’t like a lot of seasoning, go light.
  5. Remove the baking dish from the oven when the oil is melted. Tip the baking dish and make sure to coat the bottom and as much of the sides as you can. Be careful not to burn yourself.
  6. Place the baking dish on the counter and pour the egg mixture into it. I try to be sure the cheese pieces are distributed somewhat evenly so there isn’t just a big clump in the center.
  7. Bake at 350* until done. I go in after about 10 minutes and mix it all up and will do so again after another 5 minutes. Every 5 minutes until done. It usually takes just under 20 – 30 minutes in my toaster oven. I do this because I want the eggs to be scrambled, but also because I think it helps things to bake up better.

Notes:

  • Because of the cheese, some spots on the top will brown up a bit. This is fine.
  • Mix up your add-in options. Try meats and other cheeses, and maybe some diced tomatoes and spinach or other vegetables.
  • Use any kind of seasonings you like.
