Tampa’s Late Start Brewing will relaunch Saint Somewhere Brewing in 2026
In a world and a time where so many breweries are being carried under by a tough market and tougher conditions, news of a resurrection is always much happier news to pass along.
To that end, Late Start Brewing’s Jordan Copher reached out last week with the very welcome news that Saint Somewhere Brewing’s founder, Bob Sylvester, will be involved in the relaunch and the project start date is coming up fast.

Late Start Brewing, in partnership with it’s founder Bob Sylvester, will be relaunching Saint Somewhere Brewing Company in the new year.
To start, we will be deviating a bit from the rustic romance of farmhouse beers by first releasing a traditionally crafted Belgian-style Witbier. We aim to create a classic and evocative Saint Somewhere rendition of the beer style that is most fitting for Florida.
In the coming year, we will be offering other Belgian styles to complement the Wit, and some farmhouse funk is not out of the question either. Bob and I are thrilled, if not relieved, to announce the re-launch of a brand close to many beer lovers’ hearts and our new effort to bring back some tradition in an increasingly untraditional beer market.
We look forward to toasting each enthusiast and newcomer alike to this new chapter for Saint Somewhere!
The original Saint Somewhere Brewing was headquartered in Tarpon Springs and brewed Belgian-inspired farmhouse ales, including Saison Athene. One of Florida’s oldest breweries, Saint Somewhere relocated from an industrial warehouse to a brewery and tasting room in Tarpon Springs. The tasting room was inspired by Belgian breweries and offered beers from Saint Somewhere as well as limited beers from Belgium. The brewery closed its doors in 2019, and Unrefined Brewing now operates in the same space.

About Late Start Brewing
Late Start Brewing was born in 2012 within the confines of a two-car garage in Tampa. Within a few batches of homebrewing, a hobby turned to an obsession. Brewing as much as they could, too often starting late after sunset, finishing up in the wee hours of the morning (This is where our name comes from 😉 . They started serving their beer around Tampa in early 2013 exclusively at beer fests and special events. Around this time Tyler Sankey and Jordan Copher met brewer Nick Streeter when they both landed jobs at Cigar City Brewing.
Streeter helped them find their feet as they transitioned from homebrewing to pro-brewing. They learned and grew as brewers together at CCB, they recognized Nick’s qualities and had found their third team member, and together hit the local beer fest scene. They moved to separate breweries to expand their experience all the while peddling their creations around town.
