Soul Food Turnip Greens

Turnip Greens

If you’re craving some good ol’ Southern comfort, these turnip greens are where it’s at! Cooked up slow with smoked meat, they’re tender, packed with flavor, and have just the right hint of earthiness. Serve ‘em alongside fried chicken, pork chops, or pretty much anything, and you’ve got yourself a true Southern meal!

What’s the difference between turnip greens, collard greens, and mustard greens?

So, here’s the deal: turnip greens, collard greens, and mustard greens might look a little similar, but they each have their own unique flavor. Turnip greens are a little tangy and earthy, collards are mild and hearty, and mustard greens have a spicy attitude. Each one’s got its own thing going, but they’re all super delicious.

How to make Turnip Greens

Ingredients

  • 1 tablespoon unsalted butter
  • 1 cup yellow onions diced
  • 1/2 cup red bell pepper diced
  • 1 tablespoon garlic minced
  • 2 ½ cups chicken broth
  • 1 tablespoon hot sauce (I like to use one high in vinegar)
  • 1/4 teaspoon red pepper flakes
  • 1 fully-cook smoked turkey leg removed from bone and diced
  • sea salt & cracked black pepper add as needed
  • 5 pounds turnips greens washed & cut
  • 1/2 teaspoon baking soda
  • liquid smoke 4-8 splashes

Directions

  1. Melt butter in a large stock pot.
  2. Add onions and red peppers.
  3. Cook until tender and then add garlic.
  4. Cook garlic until fragrant and golden.
  5. Stir in chicken broth, hot sauce, red pepper flakes, and diced smoked turkey.
  6. Taste broth and season with salt & black pepper. Broth should taste very well seasoned and delicious.
  7. Let broth simmer for 10 minutes.
  8. Add turnips greens to pot and allow them to cook down slightly.
  9. Stir, cover and simmer for 1 hour (stirring occasionally)
  10. Remove lid and taste to adjust seasonings again. (I usually add a bit more salt, black pepper and hot sauce)
  11. Stir in baking soda and liquid smoke. (this will help further lessen the bitterness)
  12. Cover and simmer for an additional 10- 20 minutes or until greens are tender to your liking.
  13. Serve hot.
