What Makes This Dal Bengali?

Bengali cuisine features many different styles of dal, each paired with seasonal vegetables and finished with a simple tempering of spices.

One of the most beloved summer versions is bhaja moong dal, where yellow moong dal is dry roasted before cooking. Roasting gives the lentils a warm, nutty aroma that transforms the flavor of the finished dish.

Traditionally, this dal is prepared with bottle gourd (lau). Since zucchini has a similar tender texture and subtle sweetness, it makes an excellent seasonal substitute, especially when home gardens are overflowing during the summer months.

The result is a light dal that doesn’t feel heavy, making it ideal for warm weather meals.

Ingredients You’ll Need for Zucchini Moong Dal

Yellow Moong Dal – Dry roasting the lentils before cooking is what gives this recipe its signature flavor. Don’t skip this step.

Zucchini – Use medium-sized zucchini with tender skin. There’s no need to peel them unless the skin has become tough.

Ginger – Fresh ginger adds brightness and balances the sweetness of the zucchini.

Green Chili – Adjust according to your spice preference. The chili should enhance the flavor rather than overpower it.

Turmeric – Adds color and earthy warmth.

Whole Cumin– Used for tempering, cumin brings depth and aroma to the dal.

Ghee or Mustard Oil – Ghee creates a rich finish, while mustard oil gives the dal a more traditional Bengali flavor.

Tips for the Best Moong Dal

  • Roast the lentils patiently for the best flavor.
