Creamy Zucchini Pasta – Easy Summer Pasta Recipe


This Creamy Zucchini Pasta has quickly become one of my favorite ways to use up summer zucchini. It is simple, fresh, and surprisingly creamy without using any milk or heavy cream.

The zucchini is grated and slowly cooked with onion and garlic until soft and tender. As it cooks, it becomes wonderfully soft and almost melts into the sauce while still keeping its texture. Once combined with hot tagliatelle, freshly grated Parmesan, and starchy pasta water, it creates a silky sauce that coats the pasta beautifully.

A little lemon zest and lemon juice brighten the flavors, while fresh basil adds a lovely finishing touch. I love how comforting this pasta feels while still being light and fresh enough for a warm summer evening.

This is also a wonderful recipe to make when you have plenty of zucchini on hand, as the zucchini cooks down quite a bit during cooking. Serve it with extra Parmesan and freshly ground black pepper for a simple, satisfying meal that comes together with just a handful of ingredients.

How to make creamy zucchini pasta

Begin with heating the olive oil in a large skillet over medium heat. Add the onion and cook for 4–5 minutes, until softened and translucent.

Stir in the garlic and cook for another 30 seconds, until fragrant.

Add the grated zucchini and season with salt, pepper, and Italian seasoning, if using. Cook over medium heat for 15–18 minutes, stirring occasionally, until the zucchini becomes very soft and most of its moisture has evaporated. The mixture should be thick and jammy rather than watery.

Cook the pasta

Meanwhile, bring a large pot of generously salted water to a boil. Cook the pasta until al dente, following the package instructions.

Before draining, reserve at least 1 cup (240 ml) of the pasta cooking water.

Bring everything together

Add about ¼ cup (60 ml) of the reserved pasta water to the zucchini mixture and stir to loosen it slightly.

Add the drained pasta directly to the skillet. Sprinkle in the Parmesan, lemon zest, and lemon juice.

Toss continuously, adding more reserved pasta water a little at a time, until the Parmesan melts and creates a smooth, glossy sauce that coats the pasta beautifully.

Taste and adjust the seasoning with more salt, pepper, or lemon juice if needed.

Serve immediately, topped with extra Parmesan, fresh basil, and a pinch of red pepper flakes, if desired.
