Note. Dario (the brewer) said: we use barley malt, spelt malt and rye malt. Few hops. Saison yeast, of course, left to work freely until 28/29 degrees Celsius. No spices added, just a herbal tea of flowers. Infusion of chamomile, lime, marigold and elderflower) added with some sugar necessary for the refermentation (priming).
VISUAL ANALYSIS
Foam: white, pertty abundant and long lasting. Good adhesion to the glass surface.
Appearance: hazy pale golden yellow; white abundant and mousse -like head.
Effervescence: medium.
OLFACTORY ANALYSIS
Scent/ olfactory sensation: rustic bread, chamomile, flowers and zest (lemon, soft tangerine), pleasant spices aroma. Hay and herbal hints.
Intensity of aroma: medium/ low
Refinement of aroma: delicate aroma.
GUSTATORY PERCEPTION
Tactile sensation: medium to watery body, good effervescence, good and smooth mouthfeel.
Intensity of aroma: medium/ soft intensity
Taste: rustic and delicate sweetness,
Olfacto- Gustatory sensation/ back aroma: hay and flowers; multigrain bread, white pepper, lime and lemon, herbs and grass. Like a field in spring.
Persistence of aroma/ end: medium long finish, with reminiscent of chamomile, hay, candies.
OVERALL IMPRESSION: complex, intense Italian craft beer with an elegant character.
