Bar Julius Elevates Redfern’s Nightlife with European-Inspired Dining and Drinks

The hospitality group behind Bistecca, The Gidley, Alfie’s, and The Rover has unveiled its new hotspot: Bar Julius. Located within the EVE Hotel Sydney, Bar Julius opened in early January 2025, bringing a European bistro-inspired dining and drinks menu to the heart of Redfern.

Co-founder and Director, James Bradey, said the concept was inspired by the all-day dining culture of New York City’s European-style bistros. “Bar Julius is a place where locals, nearby workers, and travellers can enjoy exceptional food and drinks throughout the day,” he said.

The venue’s look, crafted by Sydney-based architects, SJB, designed the venue with a timeless aesthetic. Rich burgundy tones, Australian timber accents, and bold marble finishes create an inviting atmosphere, ensuring guests too connect and unwind.

As a central lobby bar, Bar Julius is offering a versatile setting, from breakfast to late-night drinks. Operating from early morning until late.

The venue’s Executive Chef, Pip Pratt, Group Bars Manager, Ben Ingall, Group Sommelier, Kyle Poole, and Head Chef Will Francis, who has returned to Australia from the UK to take on this new role.

Their collaboration has resulted in a menu that blend creativity and quality ingredients, for example the House Gazpacho Blend (tomato, cucumber, and parsley oil) and the All Day Mary (horseradish vodka, and Melbourne Sake Co).

Ingall, known for crafting ‘Sydney’s coldest martini’, at Alfie’s, has developed several cocktails for the venue, including the visually striking, Crystal Mimosa, served from a champagne bottle with crystal-clear clarity. Signature drinks such as the Bar Julius Negroni, and Bar Julius whisky highball, made with an exclusive whisky blend in collaboration with Archie Rose, elevates the bar’s offerings.

Alongside Ingalls cocktail creations, Sommelier Kyle Poole, said the venue is committed to quality wines and exploring new varieties.

“While we Honor classic selections, we also encourage guests to discover new favourites, featuring wines from small, family-owned wineries that prioritise sustainable practices,” Poole said.

The wine list offers a selection of lesser-known regions and varieties, inviting patrons to explore emerging flavours.

Bar Julius is quickly becoming a must-visit destination in Sydney’s CBD, offering a refined yet approachable space for dining, drinks, and socialising.
