There’s nothing quite like that moment when Starbucks announces their holiday menu and your heart does a little flip at the thought of pumpkin spice lattes, peppermint mochas, and yes—that gingerbread loaf. If you’re like me, the gingerbread loaf was the one treat you were counting down the days to enjoy with your morning latte. Well, I have some bittersweet news and a delicious solution.

The Gingerbread Loaf Nostalgia Is Real (And You’re Not Alone)

For years, the Starbucks gingerbread loaf was a seasonal staple that would appear on shelves right as the weather turned crisp and the holiday spirit started bubbling up. That moist, tender cake loaded with warm spices like ginger, cinnamon, and nutmeg, all topped with a thick, creamy frosting—it was the perfect pairing with a cozy fall drink or a festive winter beverage.

The thing is, Starbucks has a way of discontinuing our favorite seasonal treats just when we need them most. If you’ve been searching for the gingerbread loaf at your local Starbucks recently, you might have discovered it’s nowhere to be found.

So, it’s time to break out the old copycat recipes and get to making this gingerbread loaf at home. You get to skip the disappointment and the drive-through lines and dive straight into homemade magic.

This Starbucks Copycat Gingerbread Loaf Is Your New Favorite Holiday Dessert

When I first started craving that Starbucks gingerbread loaf experience, I realized I had two choices: either accept the seasonal void or take matters into my own hands.

This homemade gingerbread loaf gives you everything you loved about the original:

The moistness that keeps every single bite tender and cake-like comes from the combination of molasses and hot water in the batter—this is what gives the loaf its signature depth. The spice blend (ginger, cinnamon, and nutmeg) is balanced perfectly so one flavor doesn’t overpower the others; instead, they work together to create that warm, comforting taste that screams “Christmas is coming.” The cinnamon frosting topping is simple but absolutely crucial—it adds a touch of sweetness and spiciness that makes you want another slice before you’ve even finished the first.

So, let’s save some of our hard-earned money this year and make our own cakes at home for a fraction of the cost of Starbucks. Plus, when you make it at home, you control the quality of every ingredient. You know exactly what’s going in, and hopefully it’s not on any recall lists! Also, you can make it whenever the holiday spirit strikes—not just when a Starbucks exec decides to stock it.

Total Time 1 hour 35 minutes

Ingredients

  • 2⅔ cups all-purpose flour
  • 1 tsp baking soda
  • 3 tsp ground ginger
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • ¼ tsp salt
  • 12 tbsp unsalted butter softened,
  • 1 cup light brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • cup molasses
  • 1 cup hot water

Cinnamon Frosting

  • 1 cup powdered sugar
  • 4-5 tbsp heavy whipping cream
  • 3/4 tsp ground cinnamon

Instructions

  • Preheat oven to 350°F. Spray 8×4 loaf pan with non-stick spray.

  • Mix dry ingredients — flour, baking soda, ginger, cinnamon, nutmeg, and salt in a large bowl. Set aside.

  • In another bowl, cream butter and brown sugar together with mixer until fluffy.

  • Beat in eggs and vanilla extract.

  • Combine molasses and hot water in a measuring cup.

  • Pour molasses mixture into the sugar/ butter mixture and beat until combined.

  • Slowly add dry ingredients to wet mixture and stir until just combined. Don’t overmix.

  • Pour batter into prepared pan and bake for 60-70 minutes until a toothpick comes out clean.

  • Cool in pan for 10 minutes, then turn out onto cooling rack and cool completely.

  • Mix frosting ingredients until desired consistency. Add more cream if needed.

  • Frost the cooled loaf, slice, and enjoy!

Instructions

Step 1: Prepare your oven and baking pan

Preheat your oven to 350 degrees Fahrenheit. Lightly coat an 8×4 loaf pan (I used this Nordic Ware loaf pan) with non-stick cooking spray, making sure to cover the bottom and all sides. This helps the loaf release easily once it’s cooled.

Step 2: Mix your dry ingredients

In a large mixing bowl, whisk together the flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt. Set this bowl aside. This step is important because it distributes the leavening agent and spices evenly throughout the flour, which ensures consistent flavor and texture in every slice.

Step 3: Cream butter and brown sugar

In a separate mixing bowl, add the softened butter and light brown sugar. Using an electric mixer (or a wooden spoon and some elbow grease), mix them together until well combined. The mixture should look light and fluffy, which usually takes about 2-3 minutes with a mixer. This creaming process incorporates air into the batter, which helps your loaf rise properly.

Step 4: Add eggs and vanilla

Beat the eggs into the butter-sugar mixture one at a time, mixing well after each addition. Then add the vanilla extract and mix until everything is fully combined and smooth. I love my handheld Kitchenaid mixer for quickly making cakes like this without having to pull out the stand mixer.

Step 5: Create your wet base with molasses

In a small bowl or measuring cup, stir together a high quality baking molasses and hot water until they’re fully combined. This combination is the secret to creating that incredibly moist crumb you’re after.

Step 6: Combine wet and dry ingredients

Pour the molasses-water mixture into your butter mixture and beat until combined. This is where things start coming together beautifully. Then slowly—and this is important—pour the dry flour mixture into the wet mixture. Mix continuously but gently until the dough just comes together. Stop mixing as soon you don’t see any dry flour streaks; overmixing can result in a dense, tough loaf.

Step 7: Bake until golden

Pour the batter into your prepared loaf pan and spread it out evenly. Place it in your preheated 350-degree oven and bake for 60-70 minutes. You’ll know it’s done when a toothpick inserted into the center comes out clean or with just a few moist crumbs (not wet batter).

Step 8: Cool the loaf properly

Remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then turn it out onto a cooling rack and allow it to cool completely before frosting. This usually takes about 1-2 hours, but patience here is worth it—frosting a warm loaf will cause the frosting to melt and slide right off.

Step 9: Make the cinnamon frosting

While your loaf is cooling (or while you’re waiting for it to finish baking), prepare the frosting. In a small bowl, mix together the powdered sugar, heavy whipping cream, and ground cinnamon until well combined. If your frosting seems too thick, add a little bit more cream, one tablespoon at a time, until you reach your desired consistency. You want it thick enough to coat the loaf but spreadable enough that it doesn’t tear the cake.

Step 10: Frost and serve

Once your loaf is completely cooled, generously frost the top (and sides if you’re feeling fancy). Slice and enjoy your homemade Starbucks copycat gingerbread loaf!

Give Homemade Bread & Cake as a Gift for the Holidays

Here’s the thing I love most about this recipe: it’s not just perfect for yourself. It’s absolutely ideal for giving as a homemade holiday gift. Nothing says loving like gingerbread from your oven!

Teachers, neighbors, friends, and family members all love receiving a wrapped slice or whole loaf of homemade gingerbread loaf. You can bake it a day or two ahead, wrap it in parchment paper and tie it with a pretty ribbon, and deliver it with a handwritten tag. It feels personal, it tastes incredible, and it costs a fraction of what you’d spend on store-bought holiday gifts.

If you’re working with a budget this holiday season (and honestly, who isn’t, with the price of groceries right now?) homemade gifts like this gingerbread loaf are the perfect solution. Most of the ingredients are affordable, and you likely already have many of them in your pantry. One batch yields multiple slices, so you can share with several people without breaking the bank.

Questions About Making Starbucks Copycat Gingerbread Loaf

Can I make this gingerbread loaf ahead of time?

Yes! This loaf actually keeps really well and freezes beautifully. You can bake it up to 3 months ahead of time, wrap it completely in plastic wrap (MINUS the icing!) and freeze it. If you’re giving it as a gift, this is perfect because you can bake in batches without the stress of timing everything around the holidays. As a huge time-saver, bake and freeze your cakes anytime in October or November to be ready to give as Christmas gifts in December.

What if I don’t have heavy whipping cream for the frosting?

You can substitute with regular milk or even a mixture of cream cheese and a little milk to get that thick, spreadable consistency. The flavor and texture will be slightly different, but it’ll still be delicious.

Can I freeze the gingerbread loaf?

Absolutely. Once it’s completely cooled (with or without frosting), you can wrap it tightly in plastic wrap and freeze it for up to 3 months. Thaw it at room temperature before serving.

Is there a dairy-free or gluten-free version?

I haven’t tested this recipe with substitutions, but generally speaking, you could try a 1-to-1 gluten-free flour blend for the all-purpose flour. For dairy-free, you’d substitute the butter with a dairy-free alternative and use non-dairy heavy cream or coconut cream for the frosting. These aren’t guaranteed to work perfectly, so I’d recommend testing with a small batch first.

Bring Back That Holiday Gingerbread Magic

Whether Starbucks brings back their gingerbread loaf or not doesn’t really matter anymore, because you have this recipe. You have the power to create that same warm, spiced, comforting experience right in your own kitchen. And more than that, you have a gift-giving solution that costs pennies and feels absolutely decadent to the special person who receives it.

This holiday season, skip the search for the seasonal menu and make your own magic instead. Your family, your friends, your neighbors—they’re all going to love you for it.

Happy baking, and here’s to gingerbread, Christmas countdowns, and homemade holiday joy.
