Preheat the oven to 350 F (177 C). Line 2 large baking sheets with parchment paper.

In a large bowl, cream together the 1 cup unsalted butter, 1 cup powdered sugar, and 2 cups all-purpose flour with an electric mixer or stand mixer until a thick, smooth, and very pliable dough forms.

Transfer half of the dough to a piping bag fitted with a large star tip. Pipe the dough into swirls like a lowercase letter “e.” If the tail is sticking out, lightly press it into the side of the swirl. Space the cookies about 2 inches apart. Repeat with the remaining dough on the second baking sheet.
