Basil Lime Chicken & Peach Kale Salad


I had been dreaming about a peach salad for weeks before I finally made this one, and it turned out to be exactly what I wanted: bright, crunchy, a little sweet, a little savory, and very summery.

This basil lime chicken and peach kale salad has juicy peaches, kale, sautéed chickpeas, corn, toasted almonds, feta, and plenty of fresh basil, all finished with a simple honey balsamic dressing. I ate mine with homemade croutons for lunch and dinner, and it’s absolutely one I’d make again.

Peaches are one of those ingredients that instantly make a meal feel like summer, and this salad puts them to very good use.

What’s in this chicken and peach kale salad?

The main ingredients are:

  • Peaches
  • Kale
  • Basil lime chicken
  • Sautéed chickpeas
  • Corn

  • Feta

  • Honey balsamic dressing

There’s a lot happening texture-wise, which is one of my favorite things about this salad. You get juicy peaches, hearty kale, creamy feta, crunchy almonds, and chickpeas all in the same bite.

And honestly, don’t skip the basil if you can help it. It brings all of the summery flavors together.

Why kale works especially well for meal prep

You can absolutely make this salad with spinach or another green you enjoy, but kale is my first choice when I know I’m prepping salads ahead.

In my experience, it simply holds up better in the fridge than more delicate greens. That matters when you’re making lunch for a few days instead of eating the salad immediately.

One thing I’ve learned with meal-prep salads is that the goal isn’t to recreate a freshly tossed restaurant salad four days later. It’s to choose ingredients that still taste good after spending some time in the fridge. Kale is especially useful for that.

If you’re not a huge kale person, you can swap it. Meal prep is supposed to make your week easier, so use greens you’ll actually be excited to eat.

How to customize this salad

  • Keep all the ingredients separate if you’re worried about sogginess and assemble salads as needed. I like to pre-assemble them in containers just to make life easier. Whatever you do, don’t mix it all up and add the dressing if you intend to eat it the next day. It will just get soggy.
  • You can use fresh, canned, or frozen corn.
  • Dairy-free or vegan? Skip the feta! Nutritional yeast on top of this salad would be a delicious swap.
  • If you just don’t like feta, use gorgonzola, blue cheese, or goat cheese.
  • If you don’t have peaches other stone fruits (apricots, plums, nectarines) or mangoes or apples would work in this!
  • Instead of chickpeas, try white beans, cooked and cooled quinoa, baked tofu cubes, or tempeh.
  • Add some more crunch! Walnuts, cashews, peanuts, seeds, or croutons would be great.
  • Adding avocado would be awesome if you have any.
  • Swap kale for spinach or other salad greens you enjoy. Kale is the best for this salad, though! It seems to hold up best in the fridge in my experience.

The meal-prep mistake I’d avoid with this salad

Don’t dress the entire salad before putting it in the fridge.

Even though kale is sturdier than many salad greens, adding the dressing several days ahead can still leave everything softer and soggier than you probably want.

You have two good options.

You can portion all of the salad ingredients into meal-prep containers and keep the dressing separately, which is what I’d do when convenience is the priority.

Or, if texture is especially important to you, keep more of the components separate and assemble the salad when you’re ready to eat.

There isn’t one correct meal-prep system here. I usually like having the salads mostly assembled because future me appreciates having fewer steps at lunchtime. If you know you’re picky about salad texture, keeping things separate may be worth the extra container.

Done is better than perfect, and the version you’ll actually eat is the useful one.

What dressing works with peach kale salad?

Honey balsamic is perfect with the peaches in this recipe, but you’re not locked into it.

A few other dressings that would work:

  • Tahini-based dressing
  • Apple cider vinaigrette
  • White balsamic vinaigrette

White balsamic is especially nice with these lighter summer flavors if you happen to have some around.

This is also a good place to use up a dressing that’s already open in your fridge rather than buying an ingredient specifically for one recipe.

Turn it into a wrap

If salad alone doesn’t feel substantial enough for the meal you’re planning, wrap it in a tortilla or stuff it into a pita pocket.

I love this kind of adjustment because you don’t have to make a completely different meal. You’re just changing the format.

It’s also useful later in the week when you’re tired of eating something the exact same way. The ingredients haven’t changed, but lunch feels a little different.

A few things I’d do to make prep easier

This is the kind of recipe where you don’t have to prep every component from scratch at the same time.

You can use canned chickpeas. You can use frozen corn. You can use store-bought dressing. You can toast the almonds while something else cooks.

And if chopping and assembling the whole salad feels like too much, prep the chicken and a couple of components first. You can finish the rest later.

Meal prep doesn’t have to mean making every meal for the entire week in one long session. Having a few components ready is still a win, and future you still gets an easier lunch.

How to store basil chicken and peach kale salad

Store the salad in airtight containers in the refrigerator for up to four days.

For the best texture, keep the dressing separate and mix it in shortly before serving.

The salad tastes great cold or at room temperature, so there’s no reheating required.

I wouldn’t freeze this salad. The fresh peaches, kale, and other salad components are much better suited to refrigerator storage.

If you know you won’t eat all of your portions within a few days, an easier approach is to prep a smaller batch instead of trying to make the recipe stretch all week. You don’t have to prep every meal to make your week feel more organized.

A flexible summer lunch worth repeating

What I like most about this salad is that it feels exciting without requiring a complicated prep session.

The peaches and basil make it feel special and summery, while kale, chickpeas, chicken, corn, and almonds give you plenty of different flavors and textures to look forward to at lunch.

And as always, customize it based on what’s already in your kitchen. Swap the cheese. Use another fruit. Add croutons. Turn tomorrow’s portion into a wrap.

Meal prep works a lot better when the plan has room for real life.

Instructions

  • In a measuring cup, combine juice from 2 limes, half of the olive oil, honey, half of the basil, garlic, soy sauce and salt. Stir well and taste. Place the sliced chicken in a big bowl or baking dish and pour the marinade on top. Let the chicken sit for 15 minutes up to 12 hours in the fridge, covered.

  • Combine the olive oil, balsamic vinegar, honey, Worcestershire sauce and salt and pepper in a small jar or container with a lid. Seal and shake well. Taste and adjust flavors as necessary.

  • Heat a skillet over medium-high heat for 2 to 3 minutes. Add the remaining oil (1 tbsp) and swirl to coat the bottom of the pan. Without crowding the pan, add a few pieces of chicken. Cook the chicken on each side for 4-5 minutes; longer, if the pieces are thicker. Remove from the pan and set aside. Repeat until all the chicken has been cooked.

  • Let the chicken rest and cool completely before slicing to assemble it with the salads. Hot chicken = soggy salad!

  • Place 2 cups of kale in each container (deep containers are better for this) followed by 1/3 cup of corn, walnuts, and feta cheese. Divide the sliced peaches among each container along with the chicken. Top with remaining basil. Keep the dressing separate.
