The Coffee Pot Bakery Blog


(Makes 20 bars)

19 oz pumpkin
2 ⅓ cups sugar
1 ⅓ cups vegetable or canola oil
¾ cups sour cream
6 eggs
3 ⅓ cups bread flour
1 tbl & 2 tsp pumpkin pie spice
1 ½ tsp salt
1 ½ tsp baking soda
2 ¾ tsp baking powder

Mix pumpkin, sugar, oil and sour cream.  Add eggs. 
In a separate bowl mix all spices, salt, baking soda, and baking powder.  Add flour & spice mixture.
Pour batter into a greased half-sheet pan.  Bake at 325 degrees for 30 minutes or until toothpick comes out clean.  Cool completely.
Frost, generously, with Cream Cheese Frosting.

Cream Cheese Frosting
2- 8 oz packages cream cheese
1 cup butter softened
8 cups confectioners sugar
4 tsp vanilla
2 tbl cold water

Beat until blended, cream cheese, butter & powdered sugar.  Slowly add water until desired consistency, then add vanilla and mix thoroughly.
