

The Sicilian-inspired bandit’s drinking den, Apollonia, tucked beneath the heritage-listed Hinchcliff House in Sydney’s Circular Quay, says its latest menu is the most significant menu evolution in recent years.
Playbill – Vol. Three unfolds in four carefully curated acts, culminating in an encore of crowd favourites from the past three years.
While evolving from its original Godfather theme, Apollonia retains its essence as a cinematic cocktail bar steeped in Sicilian intrigue, romance, and vivid storytelling.
House Made Hospitality director, Jason Williams, developed the Playbill – Vol. Three menu in collaboration with Apollonia’s venue leader, Harry Hasan, and key members of the bar team.
“We’ve kept everything that makes Apollonia unique but added a fresh twist – something playful, easy to explore, and suited to any kind of night out. The cocktails are named after icons with Italian heritage from film, theatre, and music, tying everything back to the storytelling and performance we love. More than just a great cocktail bar, we want Apollonia to feel like an evocative experience from the moment guests step inside,” Williams said.
At Apollonia, booze isn’t the only star – most acts feature a non-alcoholic cocktail, crafted with the same care and creativity as its spirited counterparts, ensuring every guest has a memorable experience.
Each act of the menu follows the natural rhythm of an evening, with cocktails crafted to suit every phase, blending Italian influences with Australian ingredients.
Some highlights of the line-up include the Frankie Avalon, a modern take on the Piña Colada, a bitter, floral, seductive and refreshing Monica Bellucci, with gin, Campari, rhubarb and grapefruit, and a rich nightcap called the Francis Ford Coppola.
There is, of course, an encore by a selection of some of Apollonia’s most loved cocktails.
