Farmentry Shimotsuki IPA : Background

Farmentry Shimotsuki IPA is an 8% double IPA from Farmentry, based in Nara, Japan. It’s part of their canned and draught lineup, though the canned version is filled with a lower than usual carbonation level, making it more akin to a real ale. Similar to Farmentry Kannazuki IPA, the hops in this beer change on a monthly basis, so tastes will vary. This version uses Columbus, Cascade, Centennial, Simcoe, Cryo Citra, and Cryo Simcoe

Farmentry Shimotsuki IPA : Appearance, Aroma, and Taste

Farmentry Shimotsuki IPA poured out a dark caramel amber colour with a large amount of frothy head, consisting of small off-white bubbles. The head left some thin streaks down the edge of the glass, with some of the head just keeping on top throughout drinking.

As with the Farmentry Kannazuki IPA, Farmentry Shimotsuki IPA lacked pop in the aroma. While it was dank and resinous, it could have done with more carbonation to make the hops really pop through the malts. And those malt aroms were the more pungent of the two. A clear and distinct caramel aroma came through, with a touch of roasted biscuit in the nose. As the beer warmed up, it was the malts that provided most of the aroma.

The body began with a swift, yet fleeting, bitterness before the resinous notes came in. Like in the nose, it would have been great to see this beer with some more carbonation, again, because American IPAs have become known for that. The malt flavours provided a strong base to the beer, and while they were not overly sweet or cloying, they could have done with being toned back a bit.

Farmentry Shimotsuki IPA : The Bottom Line

Farmentry Shimotsuki IPA has a solid base to work from, but I would have preferred more carbonation, or more hoppiness to this beer.
