Mucho Group opens fifth venue with Herbs Taverne

The team behind Sydney’s Cantina OK!, Bar Planet, Centro 86 and Tio’s Cerveceria, is adding a fifth venue to their list. Hospitality group Mucho Group, led by Daisy Tulley, Alex Dowd, and Jeremy Blackmore will open Herbs Taverne in the basement of 213 Clarence Street, on 3 May.

The focus will be on the Negroni, with team is turning its attention to more complex flavour profiles, with the new venue being designed around bitter spirits, aperitif-style drinks, and a focus on the the cult favourite Negroni.

“Each drink is built to be purely delicious but also surprising. They each have something unexpected, from pairing amaro with parsley, or Gentian with passionfruit, even pairing Calvados and Zubrówka. Sometimes these combinations are more than the sum of their parts. It’s these combinations we’re looking for,” said Blackmore.

Herbs Taverne will offer a 12-drink menu centred on three Negroni variations made with different house-made and reworked digestifs, three aperitifs, three ready-to-pour digestifs, a rotating spritz special, and a few cocktails typical to Mucho’s bar menus.

The venue will be an intimate setting, designed in collaboration with local artists. Popcorn (a Mucho signature) will be offered in a new flavour. The venue will stand as a classic yet laid back bar, giving patrons the option to bring in their own food, as no kitchen plans have been made.

Herbs Taverne will be open daily from 4pm to 2am.
