New aperitivo and negroni bar destination set to open in Surry Hills

A new multi-level venue, Conte, is set to shake up Sydney’s cocktail scene, opening 2 April 2025. Created by Raffaelle Lombardi, the founder of Bar Conte in Surry Hills (the world’s first fully dedicated Negroni bar), and partner, interior designer Victoria Hampshire, Conte is the next step in their endeavours honouring Italian aperitivo culture.

Located on Clarence Street in the Heart of Surry Hills, Conte Sydney offers an extensive 40+ negroni menu, showcasing rare amari, vermouth, and Italian gin. Exclusive imports like Vulcanica Vodka and Marisa Cuomo wines will also be available. The venue will also introduce a Negroni and Martini food-pairing experience, presented by bartender Enzo Tana.

“I have dreamt of this concept for the past 10 years, the negroni is the ultimate pre-dinner drink, a symbol of Italian tradition. At Conte, we’re bringing this passion to life on a grander scale,” Lombardi Said.

The kitchen is led by head chef Steven De Vecchi, with an a-la-carte menu featuring refined Italian dishes, including Gambero Rosso tartare, lobster risotto, duck breast with beetroot puree, and blue eye cod. Each dish is prepared in the venue’s open kitchen, allowing diners to watch as their meals are brought to life.

Designed by Hampshire, the venue’s displays bold elements like moss green tiles, Verde Alpe marble, and brass accents, with a warm and intimate atmosphere created by lighting and high ceilings. The 130-seat venue includes private dining rooms, a mezzanine cocktail lounge, and bar seating for an up-close experience with the bartenders.
