The team behind the Apollo and Cho Cho San opens new venue Olympus in Redfern

The team behind Sydney venues, The Apollo and Cho Cho San, has opened Olympus in the Wunderlich Lane Precinct in Redfern.

Founder Jonathan Barthelmess describes Olympus as, “the taverna you dream of finding at the heart of a bustling Greek village, here in Sydney”.

Designed to capture the essence of Mount Olympus, there is a courtyard, pink blossoms, and a striking glass canopy, creating a space for dining with family and friends.

Head Chef, Ozge Kalvo, known for her work at Baba’s Place, has crafted a menu that blends modern and traditional Greek and Turkish flavours. With her cultural heritage at the core of her dishes, Kalvo offers a fresh take on Greek cuisine, including highlights such as king prawn saganaki, milk-fed lamb, and vegetarian options like pita pie and mezedes, catering to both meat lovers and plant-based diners.

The wine list, curated by Zoe Brunton and Sam Christie, focuses on Greek classics, alongside Australian wines and lesser-known grape varieties from emerging regions.

Matt Whiley has designed a cocktail menu that nods to classic drinks while introducing Greek-inspired flavours. Standouts include the Ouzo Colada, Rum and Whipped Coffee Frappe, and the Karpouzi Slushy, a mix of vodka, Aperol, and watermelon.

In their fifth collaboration, Barthelmess and designer, George Livissianis, have brought the space to life with limestone and travertine textures, reminiscent of ancient ruins. Handcrafted mirrors by Annie Paxton and bespoke jugs from Dinosaur Designs complete the venue’s look.
