Valentina, an award-winning hospitality professional, is the first female bar manager for Skyline Rooftop Bar, and one of the few across the city of Venice. Fondly dubbed the ‘Sky Queen’ of Skyline bar, she brings with her many years of experience, having been with Hilton since the age of just 19. 

Valentina has introduced a brand-new cocktail menu with her dedicated team at Skyline Rooftop Bar, which celebrates the timeless spirit of Venice featuring sustainable and repurposed elements in every cocktail in an effort to reduce waste whilst still offering delicious innovative cocktails.

The talented team at Skyline Rooftop Bar is committed to a sustainable mixology method spearheaded by Valentina and educating patrons that each cocktail breathes life into used ingredients that would otherwise be discarded. 

Guests are now able to participate in a new mixology masterclass. Available year round at the highest bar in all of Venice, the weekly sessions will be led by Skyline’s award-winning bar manager Valentina Mircea along with Head Bartender Alan Cescon.

The brainchild of Valentina, Skyline Rooftop Bar at Hilton Molino Stucky Venice has recently introduced a brand-new sustainable cocktail menu, guaranteed to surprise and delight every palate. 

This includes the new Mystique cocktail inspired by Venice’s iconic masquerades. A cocktail of mystery and allure, the smoky notes of Vida Mezcal pair perfectly with the strong, smooth base of Reposado Altos, while locally-made Cadello anise liqueur from Treviso adds a spicy aniseed twist that lingers on the palate. Vermouth del Professore rounds out this rich, complex cocktail, evoking the hidden layers of Venice’s cultural tapestry.

Other stand-out beverages from the new menu include the Glacial Martini. A tribute to Venice’s clarity and elegance, each sip of this cocktail reflects the smooth waters of the city’s canals. A rich blend of Calvados and Martell is brightened by fresh orange and citric pear, creating an elixir that is both refreshing and luxurious. A topping of dehydrated pear with ricotta cream adds a delightful and sustainable surprise; leftover cream from the martini’s.

Inspired by the colours of the sunset, Sunset Palette is an intoxicating blend of Italicus, Nardini brandy and Recioto del Valpolicella, balanced with sugar syrup and creamy egg white. As twilight descends upon the Venetian skyline, casting a golden glow over the ancient rooftops and winding canals, this cocktail is the perfect tipple to enjoy on the rooftop terrace to toast the end of another perfect day.
