Whiskey Jypsi is a collaboration between Country Music Star Eric Church and entrepreneur Raj Alva who put together a team of master blenders to create their brands. Tribute is their Double Barrel Bourbon expression. They claim to use vintage heirloom grains such as Cherokee White Corn, as opposed to mass-sown varieties. The mash is distilled and aged for at least four years in virgin charred oak and then finished for 3-6 months in a new American oak barrels. Bottled at 86 proof. New offering that may be very hard to find.
Orange toned like old shellac
No oak astringency, sweetness, pine, chocolate praline.
Mild, flavorful, with a strong note of candied fig; corn fritters, pine cone; there is wood, but not tanniny at all, not even oakiness, a slight sweetness, but no bite.
A long-ish finish, but very mild. The flavor doesn’t linger, it just evaporates leaving only a whiff.
Not a memorable effort, but for a new brand, a respectable offering. I want to get ahold of their Legacy expression to compare and contrast. This is not a bad bourbon, its very accessible, in fact, its non-threatening non-challenging bouquet and taste also lacks a compelling reason to drink it.
