Sheet pan dinners are so simple and this one is also incredibly tasty and low-carb!! Mixing the flavors of goat cheese, sun-dried tomatoes, lemon, and Greek seasoning elevate chicken and broccoli to a whole new level! Save lots of time by purchasing a pre-cooked rotisserie chicken and chopped broccoli. This recipe is great for an easy family meal or it can be used for your weekly meal prep.
Ingredients:

1 organic cooked rotisserie chicken, deboned & chopped

1 lb broccoli florets, finely chopped

1 TBSP avocado oil

1/2 TBSP Primal Palate Super Gyro seasoning (or Greek seasoning)

1/8 tsp onion powder

1/8 tsp garlic powder
-
2 oz. herbed goat cheese (or feta cheese)

4 sundried tomatoes, diced

1 lemon, juiced
Directions:

Preheat the oven to 450 degrees and line a baking sheet with parchment paper.

In a large bowl, toss broccoli in avocado oil, onion powder, garlic powder and Super Gyro seasoning.

Spread broccoli evenly on the sheet pan and top with chicken and an extra little sprinkle of seasoning.

Top evenly with goat cheese and sundried tomatoes.

Bake for 15 minutes and squeeze the lemon juice on top before serving.
