How to make a Fruit Cocktail Salad

Ingredients:

  • 1 cantaloupe
  • 2 mangos
  • 2 grapefruits
  • 4 oranges
  • 2 cups grapes
  • 1 pineapple- cut into chunks
  • 2 cups strawberries
  • 2 cups orange juice

Instructions

  1. Prepare the fruit by rinsing it off first.
  2. Cut the pineapple and remove the core and rind. Then, cut fruit into 1 inch chunks.
  3. Slice cantaloupe in half and remove seeds. Cut rind off of cantaloupe, then cut fruit into 1 inch chunks.
  4. Peel Mango, then cut it into 1 inch chunks.
  5. Peel the citrus fruits and remove the white skin of the fruit. Using a very sharp knife, remove the segment by passing the blade on each side of the fruit membrane.
  6. Cut the grapes in half.
  7. Cut the stems from the strawberries and cut in half
  8. Place all the fruit in a large bowl.
  9. Pour the orange juice on top of fruit and mix gently.
  10. Cover and refrigerate until ready to eat.

Option: add sliced banana before serving.

Storage

This salad keeps well, covered, in the refrigerator for two or three days. If there is banana in the leftovers, however, the salad is still quite edible. The banana might just be a little soft, which is why I like to slice and add to each serving.
