Restaurant FYR Amsterdam is Elian Muller’s first restaurant. His love for unique flavours with everyday and local ingredients has led him to cook based on the elements. Water, Earth, Air, and Fire take centre stage in this special place.

Ambience and Interior at Restaurant FYR Amsterdam

You may know owner and chef Elian Muller from his work at Vinkeles and Fosbury & Sons. At the latter, he provided the always-excellent lunch for the co-workers. It is a great loss that he has left there, but he was a wonderful addition to Amsterdam Oost.

The name FYR is a Swedish term that represents the elements: water, earth, air, and fire. These are heavily incorporated into the cooking, as you will immediately notice the large wood-fired oven upon entering. This immediately creates a warm and cosy atmosphere, making you feel like you are stepping into a welcoming nest.

Previously, Trattoria Breda was located here, and much of the interior has been preserved. In this video, you can get a small impression of the ambience. Think neutral tones and refined details that do not distract from what this establishment excels at: serving unique flavours.

Menu and Dishes at Restaurant FYR

You can choose a four- to six-course menu at Restaurant FYR Amsterdam. And yes, the elements play a role here. Water naturally represents fish (fresh from the North Sea), Earth represents fresh vegetables (locally sourced!), Fire stands for the aforementioned wood-fired oven, and Air symbolises poultry. However, vegetarians will also find a full menu here, including verjus beurre blanc with salsify and celeriac from the wood oven.

Additionally, house-made bread is baked in the wood oven by Chef Casper, Elian’s right-hand man. Of course, there are matching wines of top quality as well. Wine enthusiasts have more to look forward to, as later this year, a modest wine bar with around twenty wines will open on the right side of the restaurant. A terrace will also open this spring, where you can sip and soak up the sunshine. A place where you can relax while awakening your taste buds.
