Making “pupcakes” is easy and fun for the whole family. Get your entire family involved in making a special treat for their furry friend in honour of Cupcake Day™ for the Ontario SPCA. You may even already have the ingredients kicking around in your kitchen. Another great part is these pup-cakes can be enjoyed by your kids, too!
Now, you may be asking what a “pup-cake” is. Well, it’s exactly as it sounds – a delicious treat for pups made in a muffin tin, baked in the oven and 100% drool-worthy!
“Pupcake” recipe
Cake batter:
- 1/4 cup (50mL) creamy peanut butter
- 1/3 cup (75mL) vegetable or canola oil
- 1 cup (250mL) shredded carrots
- 1 cup (250mL) all purpose flour, white or whole wheat
- 1 tsp (5mL) baking soda
Peanut butter cream cheese icing
- 1/4 cup (50mL) creamy peanut butter
- 4 oz (112g) cream cheese, softened
- 1-2 tbsp (15-30mL) water or milk, if necessary
Cake:
Preheat oven to 350°F(175°C). Grease 6 muffin tins.
Whisk egg, peanut butter, oil, honey, and shredded carrots in medium mixing bowl. Add remaining ingredients and mix until combined. Spoon into prepared pans. Bake in preheated oven 20 – 22 minutes or until the toothpick inserted in centre comes out clean. Cool on wire racks. Decorate with icing if desired.
Icing:
Beat peanut butter and cream cheese together with electric mixer. If necessary, add enough water to achieve a spreadable consistency. Pipe or spread onto cooled pupcakes.
