It is Friday and Fridays are for fun. I am not sure why I love Canada, but I do. It could be because my great-grandparents were French Canadians who migrated to the US from Quebec. Maybe it is because I live in a border state. Over the weekend when Canada was threatened with tariffs, on exports to the US.
I have a few friends who live in Canada and the mood seems to be one of anger toward the US and I totally understand. I am also angry at the US for several reasons.
There are many recent Facebook posts from Canadians sharing tips on how to avoid buying American goods. They know that the tariffs and trade war have been postponed, but what they are doing makes sense and I want to help.
Some Canadians struggle to find mayonnaise that isn’t made in the US.
Fear not! There is no reason to buy American mayonnaise when it can easily be made at home. If your home is in Canada then it is Canadian mayonnaise. It only requires six ingredients and does not need to be “cooked”:
1 egg
½ tbsp lemon juice
1 tsp white wine vinegar
¼ tsp Dijon mustard
¼ tsp sea salt or regular salt
1 cup avocado oil, or light-flavored olive oil*
Honestly, these are ingredients that most of us have in our kitchens. Nothing special here except of course the egg. Homemade mayo tastes much better than store-bought.
The only trick to making it is mixing it well. Use an immersion blender, food processor, or blender. I suppose a spoon or whisk could work but it would take a while.
You will find recipes for mayonnaise in cookbooks and there are a zillion of them online complete with walls of words and step-by-step instructions including pictures.
I dedicate this post to my friends in Canada. I am ashamed of my country and I wish I could join you. Maybe I’ll stop by for a visit this summer.
