Carrots, in my opinion, often don’t get as much love as they deserve. I love how versatile they are and how well they tie recipes together! Whether pickled, roasted, or sauteed, these root vegetables bring just the right amount of natural sweetness into every dish they are part of.

I love roasting a large batch and finding as many ways and occasions to enjoy it. It’s the perfect recipe to serve at parties and special occasions, to enjoy for simple weekday meals, or just to have on hand for easy snacking!

  • Carrots: I use whole carrots for this recipe and chop them into pieces that are 1 or 2 inches thick before roasting. They bring a delightful natural sweetness to the goat cheese dip, along with a beautiful orange color!
  • Onion: Enhances the recipe with even more natural sweetness and a complex, earthy flavor. They caramelize wonderfully in the oven.
  • Garlic: Infuses bold, savory flavor into each bite. I prefer using fresh garlic for the best results.

How to Make Goat Cheese Dip

  1. Preheat Oven. While the oven preheats to 400 degrees F, prepare a baking sheet with foil and set aside.
  2. Prepare Carrots & Onion. Cut and peel the carrots, then place them on the baking sheet with an onion cut that’s been cut into 8 pieces. Add garlic, drizzle with oil, and season evenly with salt and pepper.
  3. Roast Veggies. Roast the veggies for 45 minutes, stirring halfway through until the carrots are golden and tender. 
  4. Blend Ingredients. Once cooled, add the roasted carrots and onion to a food processor with goat cheese, honey, and balsamic vinegar. Blitz until the mixture has achieved a thick hummus consistency.
  5. Garnish & Serve. Add chopped parsley and a drizzle of olive oil on top, then serve this savory goat cheese dip with dippers of choice!
  • Food Processor: To create a dip that’s perfectly smooth and creamy! You can also use a high-power blender if preferred.
  • Baking Sheet: For roasting the carrots and onions. Line with foil for easy clean up.

Serving Suggestions

This carrot and goat cheese dip tastes incredible served warm or cold. Warm is my preference, but it’s entirely up to you. 

Of course, every dip needs the perfect dipping items too. Try this recipe with my Sesame Cheddar Cheese Crackers, pita chips, crusty bread, or any other crackers that you love. You can also enjoy it with crispy veggies like bell peppers, celery, or more carrots.
