
Wine Country Chicken, Grape & Cashew Sandwiches

This fast, simple delicious sandwich recipe is from my girlfriend, Gloria, whose sister served it at her winery which is why I dubbed it “Wine Country” sandwich (it was either that or Gloria’s Sister’s Amazing Chicken Sandwich).

Canned white meat chicken, mayonnaise, grapes, cashews and soy sauce which adds a yummy touch of umami. Shredded rotisserie chicken or leftovers work too. I use three tablespoons of soy sauce which may be too much for some people, so start with a tablespoon and increase until it has the flavor you desire.
There are so many varieties of seedless grapes these days and recently we have been especially loving black seedless grapes, but I used red grapes for this post.
To lighten the calories, replace some of the mayonnaise with plain Greek yogurt (½ cup plain Greek yogurt and ¼ cup mayonnaise).
Gloria’s sister serves it on croissants but it will pair perfectly with your favorite sandwich bread or a brioche bun. The GIGANTIC croissants I used for the photos are from a nearby bakery so this only made four servings, smaller croissants would obviously make more.
Ingredients:
2 – 10 oz. cans canned chicken, drained
¾ cup mayonnaise (Best Foods or Hellman’s if you live east of the Rockies)
1 to 3 tablespoons soy sauce to taste (see note)
1/2 cup red, green or black seedless grapes, quartered
1/4 cup roasted, salted cashews, halves and pieces
Croissants or bread of choice
Directions:
In a medium bowl, combine the chicken, mayo and soy sauce to taste. Then stir in the cashews and grapes and pile on your bread of choice!
These sandwiches are great for a picnic and would make a nice addition to a garden tea party …paired with a glass of wine, of course!
Store refrigerated in an airtight container for up to a week.
