Easy Baked Cheesy Dip

If you’ve ever needed a crowd-pleaser with almost zero effort, this is it. Everything comes together in minutes — you’re simply mixing, spreading, and letting the oven do its thing. What comes out is a hot, bubbly dip with golden edges and a creamy centre that pairs beautifully with crusty bread, sturdy crackers, or whatever fresh veggies you have on hand. Simple as that.

What You’ll Need to Cook

  • Cream cheese — Use a full-fat block, not whipped. Lower water content means no watery dip. Let it soften at room temperature for 30 minutes before mixing.
  • Sharp cheddar — Shred it yourself. Bagged pre-shredded cheese is coated in starches that prevent clean melting and will dull the flavor of your finished dip.
  • Monterey Jack — The melt master. Its buttery, mild flavor balances the sharpness of the cheddar and gives the dip its smooth, creamy pull.
  • Smoked paprika — The quiet secret. It adds an earthy warmth that makes this taste more complex than a simple cheese dip has any right to.
  • Green onions — Slice them fresh and thin. Half goes into the dip for depth, half goes on top after baking to stay crisp and bright.
  • Other ingredients: sour cream, mayonnaise, garlic, onion powder, black pepper, cayenne, kosher salt, mozzarella.

Ingredient Substitutes

Greek yogurt for sour cream — Swaps 1:1. Slightly tangier and lighter, but barely noticeable once baked.

Pepper Jack for Monterey Jack — Same melt, more heat built right into the dip.

Chives for green onions — Milder and more delicate, especially good as a garnish on top.

Gluten-free option — The dip itself is naturally gluten-free. Serve with corn tortilla chips or fresh veggie dippers.

How to Make Baked Cheese Dip

Step 1: Soften and beat your cream cheese

Cold cream cheese will leave lumps no matter how hard you mix. Give it a full 30 minutes on the counter, then beat it until smooth and almost fluffy. Everything else builds on this base.

Step 2: Build the flavor base

Add sour cream, mayonnaise, garlic, and all your seasonings and mix until uniform. Taste it here — this is your easiest window to adjust salt, heat, or seasoning before the cheese goes in.

Step 3: Fold in cheese and transfer

Fold in the cheddar, Monterey Jack, and half your green onions. Spread the mixture evenly into your greased skillet. Take your time getting it level — an even layer means even bubbling and even browning across the top.

Step 4: Top and bake

Scatter the shredded mozzarella across the surface and slide the skillet into your 375°F oven. Bake for 22 to 25 minutes, watching from the 20-minute mark. You want golden color on top, bubbling edges, and a slightly blistered center before you pull it.

Step 5: Finish and serve

The moment it comes out of the oven, scatter the reserved fresh green onions over the top. Serve straight from the skillet while it’s hot and bubbling.

How To Store Leftovers and Reheat

Cool to room temperature before transferring to an airtight container. Refrigerate for up to 4 days. To reheat, place in an oven-safe dish and heat at 350°F for 10 to 12 minutes, until bubbling again at the edges.

Individual portions can be microwaved in 30-second bursts, stirring between each burst, though the oven yields better results. This dip does not freeze well — the cheese texture becomes grainy on thawing.
