I love baking with fresh berries in late spring and summer. These recipes highlight all of my favorite ways to incorporate berries in my baking, from simple loaf cakes to effortless dessert bars.

How to use berries in baking
- Wash and drain them well. Fresh berries, especially the more delicate raspberries and blackberries, tend to retain a lot of moisture. I like to give berries a quick rinse and then let them dry in a single layer on a paper towel-lined baking sheet. Top with another layer of paper towel and let stand to absorb all of the moisture – this can take anywhere from 15 to 30 minutes. This is especially important if you’re going to fold the berries into a batter.
- Use aluminum-free baking powder. To prevent batter from discoloring or turning blue, be sure to use aluminum-free baking powder. It makes a noticeable difference in your baking, especially with dark berries like blueberries and blackberries. It also prevents any kind of metallic flavor.
- Pre-cook berries. Juicy summer berries can make baked goods soggy or prevent them from setting up properly. To combat this, my favorite technique is to combine the berries, sugar, and starch on the stovetop and cook until reduced and jammy. It takes 10 minutes or less, and significantly improves the texture of berry crumb bars and mixed berry pie.
