I love bubble up recipes. You take some refrigerated biscuits, add a few other ingredients and you have a simple, easy, meal in one! This Sloppy Joe Biscuit Casserole recipe is simple to make and is an easy, family-friendly meal making it perfect for busy weeknights!

Yes. You can certainly purchase a can of Manwich instead of making the sauce homemade – it’s an easy switch.
This casserole is great with a big green salad or your favorite soup. It’s also great with your favorite side dishes. It’s nice with some steamed veggies too.
Since we already have diced onion, you could try some diced green peppers, mushrooms or diced tomatoes in your ground beef mixture.
You can keep the leftovers in the fridge for up to 3 days.
Sure. This casserole freezes well. Cover it or transfer to a freezer safe container and freeze for up to 3 months.


INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)
- lean ground beef – I used 93% lean ground beef. You could swap ground beef out for ground chicken or ground turkey. Use what you prefer here, I went wit ha lean meat so I wouldn’t have to drain any excess grease.
- yellow onion
- garlic cloves – I always prefer freshly minced garlic – you just get a better garlic flavor but feel free to use the jarred stuff to make this quicker to prepare.
- tomato sauce – the next few ingredients are to make this with a homemade Sloppy Joe sauce. Obviously, you would skip these ingredients if you just want to use a store bought sloppy Joe sauce (like Manwich).
- ketchup
- brown sugar
- Worcestershire sauce
- yellow mustard
- paprika – if you don’t have paprika on hand, just skip it.
- garlic powder, onion powder, salt and pepper
- onion powder
- refrigerated biscuits – I buy two of the smaller 6 ounce cans. See my ingredient image below to see what that look like. There are 5 regular sized biscuits per can. I have not tested this out with Grands biscuits or the cans that only have 8 biscuits. I think the tube with 8 biscuits would work, you would just have more filling and less biscuits. I have only tested it this way so can’t say how other types of biscuits will work.
- shredded Monterey Jack and cheddar cheeses – I use a combination of cheeses here but use what you prefer.


HOW TO MAKE SLOPPY JOE BUBBLE UP
Preheat the oven to 375°F. Spray a 9×13-inch baking dish with nonstick cooking spray or coat with a light layer of oil. In a skillet over medium heat add the beef, onion, and minced garlic. Cook for 7 minutes or until the juices run clear. Drain the pan if you have excess fat from the beef.


To the skillet add the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, and dried ingredients. Stir to combine. Taste to see if you want to add more brown sugar. Stir occasionally while simmering on low for 5 minutes. Remove the skillet from the heat.


Add the biscuits to the skillet. Toss until fully coated and evenly distributed.


Transfer the meat mixture to the prepared 9×13-inch baking dish. Top the meat mixture with the cheese.


Bake uncovered for 25-30 minutes or until the biscuits are cooked. The biscuits will be firm to the touch. Top with chopped parsley (optional) then serve.
