INGREDIENTS

  • 12 jumbo pasta shells
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 small shallot, finely diced/li>
  • 3 garlic cloves, minced
  • 2 cups cremini mushrooms, finely chopped
  • 2 cups fresh spinach, chopped
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup cream cheese
  • 1/2 cup grated Parmesan
  • 1 tsp SPG (or your favorite herb-based BBQ rub)
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)
  • Chopped fresh parsley, for garnish
