Season chicken with Fiesta Seasoning and bake in the oven at 350 until internal temperature is 160 pull and rest. Shred or chop chicken and set aside.
take a tortilla and fill with chicken and wrap. Place fold side down into a 9×13 glass dish. You should be able to fill the dish with 7 – 8 side by side, depending on how you filled them. **optional – you can add sautéed onion and bell peppers to the chicken
In a skillet add 3 tbsp butter and melt. Once melted add 2 ½ tbsp all-purpose flour and whisk until it starts to thicken. Add 1 cup chicken broth and whisk until it starts to thicken. Add 8oz sour cream, 1 tbsp fiesta seasoning, and mix all together.
Pour mixture over the chicken tortillas, season the top of the sauce with Chili Lime, and bake in oven at 350 for 25 minutes.
