This is the moment Trinity’s Escape Brewing has been looking forward to since they moved from their original brewery in August of 2024 – The Grand Opening of their new facility: The Collective at Escape Brewing.

 Escape Brewing joins forces with locally celebrated restaurateurs to create Trinity’s newest dining destination 

 Escape Brewing is thrilled to announce the upcoming opening of the highly anticipated food hall, The Collective at Escape. Following a successful launch of the expanded brewery and taproom in November, this next evolution of Escape Brewing’s development will bring a vibrant array of culinary experiences to Trinity. Officially opening this weekend, in connection with Tampa Bay Beer Week, the food hall will feature celebrated chefs and local restaurateurs, offering an unmatched destination for craft beer and culinary excellence. 

Elevating the Trinity Community with Culinary Innovation The Collective at Escape began its transformation last Fall when Escape Brewing unveiled its expanded brewery and taproom. The brewery doubled its brewing capacity to 4,500 barrels annually and now offers 20 rotating taps, solidifying its place as a hub for craft beer enthusiasts. Now, with the introduction of a diverse food hall, Escape Brewing is further establishing itself as the go-to spot for great beer, food and community gatherings.

More to Celebrate during Tampa Bay Beer Week. Tampa Bay Beer Week (TBBW) is a week-long celebration of the vibrant beer culture found throughout the Tampa Bay area. TBBW begins annually on the first Saturday of March and is a major factor in the continued growth of the Bay Area’s craft beer community. The timing of The Collective’s opening is ideally aligned with TBBW, offering locals an opportunity to celebrate the expansion of local beer culture while exploring new food offerings and pairings that will elevate the Escape Brewing experience. 

“We’re so excited to see this idea finally come to life. We’ve partnered with acclaimed chefs to bring these popular restaurant concepts to Trinity for the first time,” said Escape Brewing co-founder John McGregor. “The quality and variety of food is a great complement to our award-winning beers.” 

An Exceptional Lineup of Culinary Talent The food hall will feature six distinct dining concepts, each bringing a unique flavor to The Collective at Escape: 

Chef Ferrell Alvarez_Dang Dude

Gallito Taqueria and Dang Dude Chef Ferrell Alvarez and his partners – Ty Rodriguez, Chon Nguyen, and Myles Gallagher – at Proper House Group (PHG) will bring these two concepts to life. Gallito Taqueria will showcase authentic Mexican street food, with standout dishes like its signature Quesabirria Tacos and freshly made salsas. Dang Dude will feature bold, Asian-inspired street food, including noodles, dumplings and spring rolls stacked with flavor. 

PHG is a Tampa-based hospitality collective known for culinary innovation and excellence. Their flagship restaurant, Rooster & the Till, has received the prestigious Michelin Bib Gourmand Award for three consecutive years. PHG’s portfolio also includes their two newest concepts: Ash, a contemporary, Italian-inspired restaurant located next door to Alter Ego, a music-forward cocktail lounge, both located in the Water Street district in downtown Tampa. With other celebrated concepts, including additional Gallito locations at Sparkman Wharf and The Joinery in Lakeland, as well as a second Dang Dude location at Sparkman Wharf, PHG continues to raise the bar for dining experiences in Tampa Bay.

Jimmy Renner’s Burger Co. Chef James Renew, the culinary force behind The Little Lamb Gastropub in Clearwater and Estuary in New Port Richey, brings his expertise to Jimmy Renner’s Burger Co. This spot will serve up handcrafted smash burgers and fried chicken sandwiches, made with the finest ingredients and a focus on bold, crave-worthy flavors. Renew’s restaurants have garnered acclaim for their dedication to local, seasonal ingredients and their chef-driven menus. “The Collective is the perfect place to showcase our commitment to quality and creativity,” Renew said. 

3 Corners Pizza Known for its New York-style pizza, 3 Corners Pizza is opening its second location at The Collective. With its flagship spot on Water Street in downtown Tampa, 3 Corners has become a favorite for its thin, foldable crusts, boldly flavored toppings and friendly atmosphere. Guests can enjoy pizza by the slice or whole pies, along with stuffed subs and fresh salads. 

Florida Donut Co 3 Corners Pizza owner Chris Clamp and Tampa Hospitality Group’s Nathan Richards are jointly excited to introduce Florida Donut Co. This sweet addition will feature gourmet donuts with a twist. The menu includes savory and boozy donuts, a weekly tastes menu of rotating flavors and an array of coffee and tea drinks to complement their whimsical creations. “We’re excited to bring something fun and unique to The Collective,” said Clamp. “There’s truly something for everyone here.” 

ĀTO Burrito and Bowls The creators of Zukku Sushi bring their expertise to ĀTO Burrito and Bowls, combining fresh, high-quality ingredients with artistic presentation. Guests can build their own bowls, rolls, or burritos, using premium ingredients to create their own edible masterpieces. This is ĀTO’s third location, joining successful spots in Wesley Chapel and Winter Haven.

Events, Entertainment, and More. The Collective at Escape is not just about food and beer; it’s about community. The venue is already scheduled to host: 

Trivia Thursdays on the 2nd and 4th Thursdays of each month. 

Bends and Brews – Sunday morning yoga once a month. 

Family-friendly movie nights – Monthly events for all ages. 

Crafts and Crafts – Art & craft workshops coupled with craft beer and more. 

The brand-new taproom is equipped with big-screen TVs to show all the games and will feature regular live entertainment on weekends, making it a go-to spot for their Trinity neighbors. The venue is also available for private parties and special events. They even offer a line of fun, wearable merchandise. 

Non-stop Events to Celebrate Tampa Bay Beer Week. Escape Brewing Company will commemorate TBBW with special events and activations that feature their award-winning beers complemented by their new dining partners. The TBBW activities include: 

Thursday, Mar. 6 – Sip & Play Showdown. Nostalgia reigns supreme with this hands-on opportunity for gamers to showcase their arcade skills with Pinball, Nintendo Switch and Xbox games taking over the taproom. 

Saturday, March 8: The Culture Collective. A dynamic festival that brings together the best of craft beer, local art and live music. More than a beer festival, it’s a cultural celebration that highlights the unique creative spirit of the Trinity community. 

Sunday, Mar. 9 – Sunday Brunch at The Collective. Who says you can’t have beer for breakfast? This adventurous brunch experience features specialty items from the all-new Florida Donut Co., set to live music and Axe Throwing for a bonus thrill.
