With the most delicious fluffy texture and protein from Greek yogurt, these Bunny Pancakes are so delicious and fun for Easter breakfast. Make these bunnies for the whole family!
Fluffy Carrot Pancakes
Like carrot cake, only in pancake form, this is a fun breakfast to make for the family. They’re a great option for babies eating finger foods on up to adults!
These hearty Carrot Pancakes pack nice natural sweetness from the carrots and applesauce. This can be a thicker pancake batter, so know that you can thin it slightly, if desired, by adding a few tablespoons of milk.

Plus: You can be eating them in about 25 minutes from when you start! (There are lots of variations for adjusting these for food allergies, too.)
These are delicious served warm soon after baking, at room temperature or even chilled, so see what your family prefers. They are naturally dairy-free and can be made gluten-free and egg-free as well. See the Notes section for details.
Lemon Blueberry Muffins
The Greek yogurt in these muffins adds extra protein and the lemon and berries provide all the flavor.
Bake a batch of these Lemon Blueberry Muffins for a family breakfast that’s bursting with flavor. They’re packed with berries and are so simple to stir together! Serve these warm, at room temperature or cold.
Bacon-and-Egg Cups
This bacon, egg, and cheese muffin recipe is a perfect brunch dish, especially when you have little ones underfoot. You can make the muffin-tin recipe ahead of time and simply reheat when ready to serve, and they’ll taste like fresh one-bite frittatas from the oven.
I like adding the thyme in these for extra flavor, but it’s optional! Be sure to grease your muffin tin well with nonstick spray to help prevent these from sticking to the pan. A nonstick mini muffin pan works best here.
Sheet Pan Eggs
Versatile, easy, and perfect for a crowd, this egg recipe is a great Easter recipe for kids for breakfast or brunch.
Baking a whole tray of eggs on a sheet pan to use for a holiday brunch, inside breakfast sandwiches, or just as a hands-off way to make breakfast is a total game changer. Here’s my go-to method.
Roasted Asparagus
Turning a bunch of asparagus into a crazy-delicious (and super easy!) side dish is almost foolproof when you use this straightforward method for how to cook asparagus in the oven.
Transform fresh asparagus into the most delicious oven-roasted asparagus with this simple and fast method. (I’m using medium asparagus with about a dime-size diameter here. If you have super skinny pencil-like asparagus, reduce the cooking time by a few minutes.)
Healthy Oatmeal Cookies with Carrots
With natural sweetness from apple, carrots, and raisins, these Healthy Oatmeal Cookies are a yummy treat that you’ll love to share with the kids. And they’re a one-bowl dessert that’s a super fun way to serve up produce, too. (We like to leave these out for the Easter Bunny!)
Make a batch of these healthy oatmeal cookies for dessert, snack time, or a special breakfast. You can make these half the size using 1-tablespoon batter for each cookie and reducing the baking time to about 16-18 minutes, or until the edges are lightly golden brown.
Easy Vanilla Cake
With an easy method and a pretty pink strawberry frosting, this cake is perfect for a holiday.
This Easy Vanilla Cake is egg-free, dairy-free, and SO darn delicious. It’s lower in sugar but delivers on classic vanilla cake flavor and texture you expect.
Carrot Cake Bars
The Cream Cheese Frosting on top of these really seals the delicious deal in this Easter recipe for kids.
Moist, easy to stir together, and loaded with the classic flavors you expect from carrot cake, these Carrot Cake Bars are a perfect treat to share.

Strawberry Sheet Cake
Bursting with fresh strawberry flavor, this easy cake is perfect for spring.
The sheet cake is my go-to dessert for a potluck or picnic since you can make it up to one day ahead and serve it straight out of the fridge. The Strawberry Frosting seals the delicious deal.
Mini Ricotta Cheesecakes
With just a few simple ingredients and freshness from orange and lemon rind, these Mini Ricotta Cheesecakes are the best. We love them for Easter—we actually eat them for breakfast in my family! Plus: You simply stir the batter together, no fancy equipment needed!
Italian Easter Pie
This simple, yet delicious pie is perfect to share on Easter brunch
This simple Ricotta Pie, which is flavored with citrus and cinnamon and has a similar consistency to cheesecake, is a favorite dessert or breakfast. It is traditional to enjoy in the spring and is one of the easiest ever pies to make, with just 5 minutes of prep time.
