
For the Crust:
2 1/2 cups Heritage White Flour
1 Tbsp sugar
1 tsp salt
1 cup (2 sticks) cold unsalted butter, cut into small cubes
6-8 Tbsp ice water
For the Apple Filling:
6-7 medium apples (such as Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced
3/4 cup granulated sugar
1/4 cup light brown sugar
2 Tbsp Heritage White Flour
1 tbsp lemon juice
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 tbsp cold unsalted butter, cut into small pieces (for dotting on top of the filling)
For the Top:
1 egg, beaten (for egg wash)
1 tbsp sugar (for sprinkling)
