
Light, airy, and made with heritage flour, these sourdough popovers are a perfect addition to any meal!
Ingredients

3 eggs

250g room temperature or warm milk

125g sourdough starter (active or discard. I prefer active, but either will work!)

150g Heritage White Flour

4g sea salt
-
Oil for coating the pan (I prefer avocado oil)

Popover pan (a muffin tin will work if you don’t have one)

Directions

Preheat oven to 450°F with the popover pan inside.

In a mixing bowl, whisk together all ingredients until smooth.

Carefully remove the hot popover pan from the oven and oil each cup well (this step is important to prevent sticking!).

Immediately pour the batter into each space, filling about ¾ full.

Place the pan back into the oven and bake at 450°F for 15 minutes.

Reduce the temperature to 375°F and continue baking for 20-25 minutes (Try to keep the oven closed during the entire baking process—this helps them pop!).

When golden brown, remove from the oven.

For best results, quickly poke a small slit in the side of each popover to help maintain their shape.

Remove from the pan and enjoy warm!
