
OUR PIZZAS ARE 100% BALTIC
We wanted to take everything weāve learned making great bread, and use that to make equally great pizza. And what weāve learned is that slow fermentation makes the best bread. Thatās why our sourdough method results in our award winning loaves. And when you put the same care and patience into pizza you get something thatās not quite Neapolitan, not quite American and not completely Scouse.Ā And thatās the way we like it.
So weāre not sticking to one style, or one region. We make our own New York-style pizza sauce in-house, use the finest Italian mozzarella and source the best regional produce for our toppings. Why? BecauseĀ we take inspiration from the best of the best, add our own know-how, and bake something thatās 100% Baltic.
SOFT SERVE ADVENTURES
We used to think that good bread was tricky to make, that was until we started with Soft Serve Ice Cream, reallĀ made in house soft serve. Around 99% of all softĀ serve ice cream is made from pre-prepped UHT bases, you buy them in 1 litre cartons, poor it in the machine and press go. The mixes contain all sorts, chemical emulsifiers, fake flavourings, palm oil, veg oil and many other ingredients you can’t pronounce. We make our own, which almost no one does, why? Because its really difficult, you need to balance fat content, sugar level and milk solids all in a mix that will churn to the correct consistency and without any preservatives or chemicals. It has taken us months of work andĀ a spreadsheet of formulas that would make Bill Gates queezy, but finally our soft serve is ready to go.
