Ingredients
For the Grinder Salad
- 2 cups shredded iceberg lettuce
- ¼ cup sliced pepperoncini
- ¼ cup sliced green olives or banana peppers
- ¼ cup grated Parmesan cheese
- ⅓ cup mayonnaise
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon Italian seasoning
- Salt & pepper to taste
For the Grinder Sandwiches
- 2 large hoagie or sub rolls
- 4 slices provolone cheese
- 4 slices salami
- 4 slices ham
- 4 slices turkey
- 4 slices tomato
Instructions

In a medium bowl, whisk together mayo, red wine vinegar, Dijon mustard, Italian seasoning, and Parmesan. Stir in shredded lettuce, pepperoncini, and olives. Season with salt and pepper. Chill until ready to use.

Slice hoagie rolls and toast them open-faced under the broiler for 2–3 minutes until lightly golden.

Add provolone slices to one side of each roll and return to broiler for 1 minute to melt.
