
Mexican meal preps are all over our website and all over the WWL plan! We can’t get enough of Mexican-inspired fare. Whether it’s breakfast, lunch or dinner it’s really to invoke the flavors, ingredients, tastes, and textures of what we refer to as Mexican food (but what’s more often Tex-Mex, but that’s another story…)
There are so many reasons why. The flavors are bright and dynamic. It’s a fun food to eat; let’s face it, anything that says it’s ok to eat with your hands is going to over well with most people, children included. It’s perennially popular as a cuisine, and easy to make, easier to eat. We love that the ingredients are easy to adapt to kids, too. Mexican fare is a very vegetarian (and vegan) friendly part of the food world, so it’s not hard to please people with different dietary needs when you’re serving Mexican dishes. In fact, many of these recipes can be customized based on what you have on hand.
It’s the best of tacos and the best of breakfast in one bowl. Eggs, shredded cheese, potatoes and fresh pico de gallo. Hard to get better than this, first thing in the morning! Make this vegan with scrambled tofu and non-meat crumbles, and vegan cheese.

Did you fall in love with fajitas at a restaurant where they bring them to you, tableside and sizzling? We thought so. Easily customizable with chicken or shrimp, these steak fajitas are ready in a half an hour and will likely please everyone, even kids— just skip the dash of cayenne unless your kids love the heat!


This is the easiest and ultimate meal prep, full of chicken, black beans (or swap red ones), corn, cheese, and so forth. Minus the actual tortilla.


They’re like pancakes but also like fritters. They’re spicy and great for breakfast, lunch or dinner, and happen to be lower in gluten-free!


Have you ever had the popular Mexican street food elote? It’s basically corn on the cob charred on the grill and smothered in a slightly spicy sauce and dusted with a tangy cheese. Cilantro is often sprinkled on top. Ours is a deconstructed dippable version for snacking.


If you’re not new to us, you know we love overnight oats around here. The delicious creamy cinnamon-lovers drink with rice and evaporated milk becomes a breakfast dish with these overnight oats.


Ok, so these delicious tacos aren’t technically Mexican. And hey while we’re at it, not everything we refer to as Mexican food in the U.S. is truly Mexican anyway; much of it is Tex-Mex. Plant-based and just spicy enough, this Mexican-Korean mashup is a great meal prep taco.


Vegetarian fare abounds with Mexican dishes. These enchiladas prep well, freeze even better, and reheat like a dream. We like to add a little extra cheese when we reheat it. Shhh!


Yes, we’re a little obsessed with this breakfast burrito on a griddle, but we feel it bears sharing again. After all, the Taco Bell Crunchwrap Supreme is 20 years old, and we are going to use this as a cause to celebrate our version, the Brunchwrap Supreme.


We don’t think there are two ingredients that are better suited to each other than black beans and sweet potatoes. Well, maybe broccoli and cheddar come in a close second! Regardless, these quesadillas are calling your name!


The beef in this dish is super flavorful, shredded, and ready for your meal prepping needs! It comes together fast thank to the Instant Pot, which speeds up the process. We love this with rice.
