Ingredients
- 3 small apples cored, peeled and diced
- 1 Tbsp cinnamon divided
- 1 tsp lemon juice
- 2 cups quick cooking oats
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1 tsp ground ginger
- 2 tsp baking powder
- 1 tsp salt
- 2 eggs
- 2 cups milk
- 1/2 cup canola oil
- 1 tsp vanilla extract
Instructions

Preheat the oven to 350 F. Lightly grease a 9×13 inch glass baking dish with non-stick cooking spray.

Place the diced apples into a bowl of water with the lemon juice. Let soak for 5 minutes, then strain and toss with 1 tsp cinnamon – lightly coating the apple pieces.

In a mixing bowl or stand mixer, whisk together the milk, eggs, oil and vanilla. Then stir in the quick cooking oats, rolled oats, brown sugar, flour, the remaining 2 tsp cinnamon, ginger, baking powder and salt. Stir until loose batter forms. Gently fold in the coated, diced apple pieces and pour into the prepared baking dish.

Bake in the preheated oven for 30 to 35 minutes, or until set in the middle.
