
Chicken and sweetcorn, with a generous spoon of mayonnaise, a very popular sandwich filling in the UK, and we know why don’t we – it’s gorgeous! Those little pots of deli filling from a supermarket are tasty, easy and convenient, but if you mix just three ingredients together, you can make it at home for a third of the price! You’ll know what’s in it too, and can customise it to your hearts content.
What do I need to make a chicken and sweetcorn sandwich?
- some lovely thick sliced bread
- some cooked chicken, either leftover from a previous meal, or a bit cooked from fresh
- sweetcorn. I tend to use tinned for ease, well drained, but frozen is just as good, it will need cooking first
- mayonnaise, expensive or own brand, doesn’t seem to matter much. I use own brand for economy
How do I make a copy of a deli chicken and sweetcorn filling?
- if the chicken is raw, chop it small, pea sized, and cook it until cooked all the way through. If cooked, cut up very small
- tip the chicken into a mixing bowl
- open the tin of sweetcorn, or cook the frozen sweetcorn.
- add the sweetcorn to the mixing bowl
- add the mayonnaise to the mixing bowl
- give everything a thorough mix
- that’s it, store, covered, in the fridge until needed. It will keep in the fridge for 3-4 days
- once ready to eat, spread a quarter of the mix onto a slice of thick cut bread, top with the other slice, cut in half and eat, or wrap ready for packed lunch time
- there’s no need for butter or anything else
How to store chicken and sweetcorn sandwich filling
In the fridge in an airtight container, this mix will sit quite happily for 3 days.
This filling will not freeze well, so is not recommended
What other ingredients could be used in a chicken mayonnaise sandwich filling
- Vary the flavour of the mayonnaise. Most supermarkets have several different flavours available
- add some mustard, Dijon would work well
- Add a little finely chopped vegetable
- very finely sliced celery
- grated carrot
- fine chopped black olives
- add some fresh spinach leaves, lettuce or good old iceberg
- vary the bread, dependent on what you have in – sourdough, granary, floury baps, wraps or anything else you fancy
- add some sliced gherkins
- swap the mayonnaise for soft cheese for a different flavour

I bought a pot of chicken and sweetcorn deli filling from Sainsbury’s (price matched to Aldi) and reverse engineered it. This is what I found.

The contents of the pot weigh 220g
- The label says that 39% is chicken
- and 23% is sweetcorn
- it doesn’t mention the mayonnaise as a percentage, but to get 100%, the mayo must be 38%

The sums to make a 220g pot
- 39% (chicken) of 220g is 86g
- If the chicken you use is £2.99 / kg, the chicken you use would cost 26p
- 38% of 220g (mayonnaise) is 84g, using own brand mayonnaise, 84g is 17p
- 23% of 220g (sweetcorn) is 51g, using a tin of sweetcorn, 51g is 12p
- Total cost of the home made pot of deli filling is 55p
- Total cost of purchased filling is £1.49, saving 94p
- this makes 4 sandwiches, so 8 slices of bread. Toastie bread, 75p, 27p for 8 slices
- Total cost of filling, £0.55 for 220g. The equivalent in Aldi at the time of writing is £1.49 for 220g, so this is around one third of the price
- Plus 27p for bread
- Cost per sandwich 20p
- Cost per sandwich using purchased deli filler 44p, so making your own is less than half the price – got to be worth doing!
