
This sandwich is for tea on Christmas Day on a Vegetarian Meal Plan for the entire Christmas week
It is lentils spiced with curry powder, moistened with mayonnaise and with a hint of sweetness from a jar of mincemeat, together with the fresh crunch of raw vegetables all encased in soft fresh bread. Absolutely delicious!
What do I need to make this lentil sandwich
for 2 sandwiches, you will need
- half a tin of lentils, drained, or 140g cooked lentils – keep the remaining half a tin for another day if you are following the meal plan
- a tsp of curry powder, any kind you like, not paste as that needs to be cooked
- 2 tbsps mincemeat
- tblsp mayonnaise
- some kind of greenery or salad
- 4 slices of bread, no need for butter – I happened to have a beautiful (free) granary loaf from the community larder when testing this recipe, so that’s what I used
How to make a Coronation Christmas Sandwich
It’s very simple.
- Drain the can of lentils.
- Mix everything together
- Stir well together and make 2 sandwiches with the mix, half in each sandwich, no need for butter.
- If you have any salad leaves available, they go well. I used a few rings of leek and a couple of shredded Brussel sprouts
What variations are there for a Coronation Christmas Sandwich
- A few green leaves would be nice, spinach from the garden perhaps, or a bit of lettuce, or maybe a few herb leaves, basil or parsley
- You could use any dried fruit to add that note of sweetness; sultanas, currants, diced apricots, chopped dates etc
- You could use the mix in a pitta or wrap, or on top of a jkt potato, or with some crudite (carrot batons and celery perhaps)
- Add a sliced boiled egg
- Not got any mince meat? Use mixed dried fruit, or raisins, dried cranberries, chopped apricots or anything like that for the pop of sweetness
- Use mango chutney as well as the mayonnaise
Would you like a vegan Coronation Sandwich?
You just need to use a vegan mayonnaise. Everything else is vegan (check the mincemeat, brands vary)
