Easter is one of my favorite times of the year.

It’s typically the start of the warm season here in Minnesota. And as a Christian, it is a deeply meaningful holiday for me. Every year, I am reminded that Jesus conquered sin and death and rose from the dead three days after it seemed to earthly eyes and ears that all hope was lost.

With so much to celebrate, I decided to create a fun little Easter brunch board, full of delicious foods.

You can make a lighter brunch board as an appetizer to a heavier breakfast or brunch – or add some heartier items to make it a full meal.

Before You Get Started:

A brunch board allows your guests to pick and choose, mix-and-match foods to their liking. There’s something for everyone – even the pickiest of eaters – when you assemble a grazing board.

  • Saving money: The foods I’ve included on my board are all quite affordable: Eggs, deli ham, fresh vegetables and some simple dips. To save money, be sure to shop your own kitchen first – you might have many of the items needed for this board already in your fridge or pantry.
  • Customizing the foods: First things first, this Easter brunch board is totally customizable. If you’re looking to save money, be sure to inventory your fridge and pantry for edible items to include on your board.
  • Choosing a board for your base: If you have a large grazing board or charcuterie board, use that. If not, you can use a large tray, baking sheet – or you can put it directly on a countertop or table. Just be sure to use a layer of parchment paper to keep things tidy.
  • Assembling a board: Of course you want your board to be pretty. This is a pretty easy feat when you’re using a variety of food items in different colors. Adding some different serving vessels (like little glass jars to hold dips and spreads) will also help. Once you have some bigger items on your board, you can fill in the blank spaces with nuts or crackers

What To Include On Your Easter Brunch Board

Here is what I included on my affordable board:

  • Hard-boiled eggs: Eggs are synonymous with Easter brunch, so be sure to include them on your brunch board. If you want something with more pizzazz, you could make deviled eggs. Both are budget-friendly options.
  • Ham: Sliced deli ham is another essential food item for your brunch board. Your guests can pile ham on top of a bagel and cream cheese for a hearty breakfast sandwich.
  • Smoked salmon: I happened to have some smoked salmon on hand so I included it as another protein option on the board.

  • Vegetables: Look for colorful springtime veggies like asparagus, carrots, sugar snap peas, and cucumbers.
  • Fruits: I only included oranges on my board, but you could include many different types of fruit like strawberries, blueberries, blackberries, grapes, grapefruit segments or apples.
  • Crackers: I included Mary’s Gone Crackers Super Seed Classic crackers but virtually any cracker will work on this board.
  • Nuts: To add some more interest, variety – and to fill in the gaps on your board – included some nuts like pecans, almonds or pistachios.
  • Baked goods: My board only contains one baked good (a blueberry scone) but you can include bagels, croissants, scones, Danishes, brioche or other baked goods on your board.

Dips & Spreads

Include a variety of dips and spreads on your Easter brunch board. These can be used to spread on bagels, croissants, toast, crackers – any of your carb-y items:

  • Orange marmalade or your choice of jam or jelly
  • Green goddess dip (pictured)
  • Strawberry cream cheese: To make homemade, beat cream cheese and strawberry jelly
  • Herb cream cheese: To make, combine cream cheese with a dash of onion powder, some chopped parsley and a squeeze of lemon juice
  • Blueberry-coated goat cheese log

The sky is the limit here – purchase a ready-made dip or spread or make your own.

Tips To Make A Heartier Board

The board pictured here could work as an appetizer or a meal. However, in either case you can add some heartier items to make it more meal-worthy. Here are some ideas:

  • Breakfast egg cups
  • Quiche/egg bake/frittata
  • Bacon
  • Assortment of cheeses
  • Yogurt with toppings
  • Cottage cheese
